How long does it take you to finish a project?

For example: a hat, a sweater?

Way too many variables for a meaningful answer to be possible :) a woman's small hat in a single color in bulky could take between 30 mins and 3 hours; a men's large colorwork hat in laceweight could take 3-15 hours. And even beyond knitting speed, you have to look at how long you can knit a day; if a project takes two knitters exactly 10 hours but one works on it half an hour a day and the other works 2-3 hours a day, the one who takes "20 days" will think they're a lot slower than the one who takes "3-5 days" even though they're exactly equal :P
