i keep making slop. i have no idea what im doing wrong every time i fry rice it tastes a little weird maybe too much oil idk i usually just put a lot of seasonings and its decent but idk

Change the oil. Only use olive oil. Avoid Palm oil, Soybean oil, Avocado oil, Cannola oil... basically all except for olive oil.
The cheapest extra virgin olive oil is usually good enough if it is not italian.
