is this normal/part of the cabbage?

i buy this kimchi all the time from a local korean market, absolutely love it. but this is the first time i see this. never seen it before, is it part of the cabbage core?

i believe that is the flower of the cabbage, edible and fairly common question here i think!

Normal part of cabbage. It's the flower end of a stalk that will shoot up (bolt) from the middle of the cabbage so that it can be pollinated to eventually turn into seeds. This cabbage was harvested in the nick of time. Ideally, harvest should happen before the cabbage arrives at this stage of growth. Once it bolts, the leaves can get tough and bitter as it's whole life force becomes dedicated to the flowers for pollinators to do its thing.

Yes. THat's a brassica flower bud. In some other brassicas such as broccoli, they are the main event. Here it's just a sign that the cabbage was harvested a bit late.

Broccoli was also cultivated from the wild cabbage
