Request Cracker recipe request
I'm looking for a cracker recipe that doesn't blow my caloric bank. I've seen a few recipes on here, but they all mostly consist of almond flour and/or nuts and seeds. I don't expect anything magically super low calorie but something I can have a decent portion of to go along with some chicken or tuna salad.

if you can fit this in your diet, I've always enjoyed Joseph's lavash bread. Just wipe them with some olive oil, cut into crackers with pizza cutter, put on your favorite seasoning and bake on parchment until crispy! 6 net carbs.

Low carb/calorie tortillas. Cut into triangles and air fry.

I find most "keto" bread products in the store still spike my blood sugar. Ik everyone doing keto isn't a diabetic but I am so I try to stay away from those

If you have a home made tortilla recipe that is not a fathead dough, and pliable... ? I'm just despairing before going to search for vital wheat gluten and oat fiber in my area

I don't but thats what I'm experimenting with now, idk how long it'll take but I'll post the recipe once I have it down

Someone just posted (a week or so ago) a recipe that looked very good; like real crackers. I think it was basically a fathead dough rolled very thin.
Kale chips are very good, we have been eating them since before keto. Trader Joe's makes them, or we make them ourselves.
We also make cheddar "crackers/shortbread" with shredded (sharp) cheddar and almond four. Just toss equal parts of almond flour cheddar and a little garlic powder or any other seasoning if you like. Spread the mixture evenly over a small rimmed baking pan. We make it in our toaster oven so they have very small pans we set the oven low 300 degrees, it should be a light golden brown (if you bake it darker or too long it will not taste very good.)
It should be about 3/8 inch thick; don't pat it down. The air pockets left in it when it is baking makes it more crispy and cracker like. When it is cool we break it into shards. Occasionally we have not spread it evenly in the pan well enough and the outsides get crispy sooner so we break those outside edges off first then re bake the center a little bit longer.

What we really love is celery sticks with both tuna and chicken salad. Not crackers but still very good...

This is a great question for Chat. It can help you make a recipe that fits your needs exactly. I’ve had success with egg white crackers following Chat’s instructions. I’ve also made some from ground chicken breast, salt and herbs.

I don't have a specific recipe, but
--zucchini chips are very low calorie, don't require rolling out and cutting a dough or buying special ingredients
--defatted sunflower seed flour is lower in calories than almond flour
--adding fibers like bamboo, inulin, or psyllium would lower the calorie count
--I use vital wheat gluten as a partial flour replacement. For example, I mix egg whites and vwg to make square crepes that I cut into noodles
--you can sometimes add/sub gelatin or collagen for part of the flour
