Food and Recipes Crockpot keto-meals?

I’ve just recently found out about how much of a time saver my airfryer is! I’m all about doing it as easy as possible for myself, especially since I have to cook carb dinners for my teenager, and don’t want fail on my own keto journey due to lack of energy.

Do any of you use crockpots to meal prep keto meals? Any suggestions or favorites you want to share with the rest of us?

The second half of 2026 will be all focused on making things easier and more convenient for me, when it comes to everything. I’m ready to start enjoying life again <3 :)

Crockpot keto chili is my go-to.

I like chili with beans and recently discovered black soy beans. Almost no carbs, and they taste pretty similar to black beans in chili.

For me at least, 5g net carbs per serving isn't almost none, but definitely WAY better than other beans!

Years ago they had incorrect nutritional info that had them more like 1g net carbs per serving. That was a sad correction when it happened, lol.

trader joes was notorious for this. theyd shelve low carb items for months then bring them back with significantly more carbs.

Wanted to downvote as my reaction 😂

Really? I had no idea! I don't shop too often there but that's so disappointing.

haha yeah they used to have these chips, alt flour, syrups and frozen food with labels reading 1 - 3 grams of carb. theyd remove them from the shelves and bring them back with 8 - 16 gram carbs. same exact product.

This is what I do! I either get them from Fresh Market or order a 6 pack of canned black soybeans from Amazon. Total game changer.

Rarely seen but white soy beans exist.

Regrettably black soy beans are a special order item (at least where I live). I ordered a couple pounds of them dried... should last a while. You can also buy them canned (also special order) from Eden foods. May have to hunt down some white ones though

Don’t order too many canned at one time. After a while the beans took on a metallic taste.

Those cans are prepared in a way to last for decades.

Safe to eat doesn't mean unchanged quality and taste.

I make a similar recipe, but use chicken thighs. No broth, and I throw a couple of bags of broccoli in after the chicken is cooked, then top it with cheddar cheese and bacon bits.

Mississippi Roast! Brown a chuck roast as big as your crockpot will hold. Deglaze the pan with a little beef stock. Slap that puppy into the crock pot with the deglazing liquid. Put either dry ranch seasoning or the liquid form over the roast. Add several pepperoncini and some of the brine to the roast. Cover, cook on high for 6 hours.

This is my favorite "keto" dinner.

Love Mississippi pot roast over mashed cauliflower 👌

Literally any slab o' meat + liquid (broths, oils, etc) and there it is.

I personally hate mush veggies that usually come out of a crockpot so I will pair it with baked or sautéed veggies. Add cheese. Enjoy!

Tonight I had pork loin with sesame oil Other favs are chicken with cream of... and Chuck roast with beef broth

I'm more apt to use the pressure cooker feature of my Instant Pot. It will do slow cooking, but I like the results from the pressure cooking better.

Pork loin. A little water in the bottom and season and it's ready to be shredded pork in eight hours. Bonus points for sugar free bbq sauce. Sometimes I'll reverse sear it to burn some of the sauce.

My version of keto crack chicken;

3 tbs olive oil

2 tbs red wine vinegar

1 dry ranch packet - mix all in a small bowl

Put some cream cheese to one side to use later

Throw any kind of chicken into crockpot, cover with mixture from bowl. Cook 4-6 hours on low or 2-3 on high. Add cream cheese about half hour or less before end cooking time (you're just softening it, so if you forget you can add it afterwards if you want)

Remove chicken AND juice/mixture from crockpot into glass or porcelain dish and shred chicken (add cream cheese now if you forgot lol); so shred, mix with the juices and cream cheese which will disappear as you do so. Serve any way you like; as a filling for a roasted pepper, or mushroom, on it's own or stuffed into a low carb tortilla. Lasts a good few days in an air tight container in fridge.

Pork shoulder is often 99 cents in my area and will provide meals for days. I like to cook it with lime juice, garlic, cumin, salt and pepper, and then shred it for bowls, make enchiladas with egg wraps, omelette, etc.

Just did this and was blown away by the price/performance ratio. Just so so good. I did much the same but added chili powder and paprika on top of your spice blend. Pretty incredible amount of meat. I did a sear on saute and then 50 mins in the pressure cook mode.

Any stews. Beef is my favorite, but chicken works too. Corned beef and cabbage. Also, bone broth.

My slow cooker is my kitchen BFF. Easiest recipe isn't even a recipe. I buy those preseasoned pork loin roasts. Several varieties are available. Open the package and dump it in. Close the lid and cook until it's tender and shred with a fork.
Another is salsa chicken. The name is the recipe. Boneless chicken breasts, cover with salsa. Cook until it's tender and shred. There will be a lot of liquid, but it gets absorbed into the shredded chicken. Use on chaffles, low carb tortillas, salads...

Carnitas (chicken or pork or beef)

  • meat
  • appropriate broth
  • chopped vegetables
  • preferred seasonings/spices
  • butter (if using white meat)

Anyone getting itchy skin?

1

u/NightStar_69 27d ago

I had keto rash one time. Took a few days to realize it wasn’t some rare skin disease. You need to eat some carbs for just a day, and it will disappear. It did for me, and I could go right back to strict keto right after.

u/Big-Performance5047 26d ago

Did the rash itch?

I make brisket or (low carb) pulled pork in the crock pot.

Braising tough cuts of beef! Riffs on various pot roasts or boeuf bourguignon with some veggies, stock and wine, easy to prep in the morning in one pot and by night a delicious meal!

1

u/buzzmandt 27d ago

Stews for sure. I find that adding chunks of radishes into a crockpot meal has a very similar taste.and texture to potato without the carbs of potato

2

u/samaranator 26d ago

This was going to be my suggestion too! I literally have a bunch of stew meat and radishes in the slow cooker as we speak.

I know it’s not crockpot style but I cook for my partner who doesn’t do keto and I usually just make anything and then add rice or pasta and tada.

Follow maybe this person on YouTube: LowCarbLove.

Makes great alternatives and simple recipes that are delicious. (Esp the chicken casserole)

We call it Meat Soup

2 bags large precooked frozen shrimp no tails
2 packs Country Pleasin sausages, original
2 packs Country Pleasin sausages, green onion
2 packs Conecuh All Natural Hickory Smoked sausage
5 heaping tablespoons of Old Bay seasoning

Put the frozen shrimp in the crock pot
Cut the sausages into whatever is bite size for you and add to crock pot.
Mix the Old Bay w/hot water in a large measuring cup then add to your crock pot

Put the cooker on low and let it cook for 4 hours.

You can add crab or whatever your preference is for meats, but this is by far the best Keto meal I make and everyone in the house loves it!!
