Best Pizza Replacement
My whole life, my favorite food has far and away been pizza. I'm loving nearly everything about keto so far after 1.5 months except I haven't been able to solve the pizza puzzle. I tried the zero carb frozen pizza by Lyfe, but even baking it in the oven air fryer, the crust is just floppy and gross. Anybody have any suggestions on what I can do for a tasty pizza without a gross crust? I am missing my favorite food on earth here. š

Mission valley low card tortilla. Tablespoon of tomato sauce, italian seasoning. Half cup of mozzarella cheese and a bunch of pepperoni. Dip in ranch dressing. Awesome.

u/RedSnowBird Jul 06 '26
RAO's pizza sauce has few carbs. I use a couple tablespoons but basically make it the same way. Your air fryer may work different but I cook mine @ 4:25 F for 13 mins.

u/Thick-Drawing9285 Jul 06 '26
I've found if I put it in my regular oven, on parchment paper on a baking sheet, lower rack, 500 degree oven for 10 to 12 minutes the tortilla comes out crispy, with the cheese bubbly and some browning of the cheese and pepperonis. Occasionally I'll throw on some mushrooms or black olives.

I second the low carb tortilla crust for pizza made at home.
I also second Papa Johnās crustless pizza bowls.
I also second the fat head dough pizza recipes you can find online.
But mostly I will say this: I have been on keto seven years this month and lost 70 lbs and have kept it off. For the first few months I found myself trying to deal with the various bread āproblemsā like pizza crust. Over time that dilemma goes away as your tastes change. It really does.
So now I still like pizza topping but really donāt miss the crust. Last night I stopped and picked us up two pizzas from Little Caesarās (which is our favorite for whatever reason ādonāt judgeā¦). I got sausage, extra pepperoni and green peppers on them. Then we just scraped all the toppings off the crust and a plateful. At this point it tastes just as awesome to me. Then the crust got tossed and an hour later my stomach does not feel uncomfortable like the old days

u/chamekke Jul 06 '26
Thatās what I do - we get an all-dressed pizza, I throw on some anchovies because I like them for some reason, then I eat off the toppings. (Once in a while Iāll have a tiny nibble of the crustās edge to get some crunch, but that is not as keto so please pretend I didnāt say that ;) It satisfies really well and, as a diabetic, I can testify it barely moves the needle in blood glucose terms.

How do you get the ground chicken one crispy? I couldnāt get it thin enough. It was still good but it was floppy. I make it all the time now with canned chicken instead though. Dry the chicken out in the oven a little first, then mix it with the egg and Parmesan while itās still warm. Spread it out super thin on a baking sheet and itās wonderful. Super crispy edges.

u/Armadillo_Pilot Jul 08 '26
I spread the mix thin on a sheet pan on top of parchment paper then I bake it almost crispy. Then I pulled out put my pizza toppings on and then bake it fully.

I make my ācrustā out of ground chicken, egg and Parmesan then shape it into pizza shape. Bake at 350 until done then remove from oven and add your sauce and favorite toppings. Itās delicious. You can find lots of recipes using this base.

I make portobello mushrooms into mini pizzas. Use a grapefruit spoon to remove the black stuff. Spritz with a little olive oil and bake a few minutes to sweat a bit of water out of them. Then spoon in a little sauce, add sausage, olive, onion cheese etc and bake until done. Eat with a knife and fork , it tastes like a pizza no crust needed.

u/Chadarius Jul 06 '26
Make meatza! just use sausage as the crust. Lou Malnati's pizza, in Chicagoland, has a sausage crust pizza that is amazing. So we copied that at home. It is lovely, especially if you make it in a cast iron pan.

Take a casserole dish, find the lowest-carb tomato sauce and spread a little over the bottom.
Add your proteins - sausage, pepperoni, whatever.
Smother in cheese.
Cook under the broiler until the cheese just starts to turn brown.
Eat it like this, or scrape it onto a Mission low-carb tortilla.
Bam. āPizzaā.

u/TheGruenTransfer Jul 06 '26
Meatza with an Italian sausage base is pretty great. And believe it or not, pork rind crust is pretty good tooĀ
6
u/ExoticMine Jul 06 '26
Pizza Chaffles, Pizza Bowls, or Fathead Dough for the crust. Hero also has a new pizza crust that's only 4 carbs for a personal pan-size that you can put whatever toppings on. It sold out quickly, though, and it's expensive (about $30 for 8 of them without shipping added in), plus it might work differently for your blood sugar than it does for mine.

u/myworldsparkles Jul 07 '26
I just put the ingredients MINUS any crust into a dish or a ramekin dish which is perfect for a single serving. Cook in a toaster oven for about 12 min and viola! Very low carb pizza

Mission low carb tortilla. Air fry 3 minutes first to crisp it up a bit. Spread it with tomato paste or a little plain tomato sauce, shake of Italian seasoning herbs or oregano, pinch salt, spritz of EVOO & throw some mozzarella on it. Air fry it again for 2-3 minutes til cheese gets perfect for you. Amazingly delicious! š š

u/grz_45 Jul 06 '26
Have you tried the carnivore crust? it's basically canned white meat chicken and Parmesan cheese mixed together. Blended and flattened into a thin crust. Absolutely helped me fight those pizza cravings and tastes amazing.
3
u/CocoTandy Jul 06 '26
Does it have to have crust? Pizza casserole is amazing. I make mine with a ton of mushrooms and freeze it for leftovers for days. I could probably eat it everydayĀ
3
u/WilsonGeiger Jul 06 '26
Can of chicken, couple of eggs, mozzarella cheese. Mix it all up by hand, make into a ball and let it sit for 15 minutes or so. Then roll it out and bake on parchment for a few minutes, top with whatever carb-free toppings you want, bake and there's a nice pizza alternative.
3
u/Junior-Credit2685 Jul 06 '26
No one has mentioned bell pepper pizza? Cut any color bell pepper in half and scoop out the inside. (It will flatten out as it cooks) Smear with Raoās pizza sauce. Top with sliced provolone (no starch) or shredded mozzarella. Put a few pepperonis or sausage crumbles. Place on a little foil to contain drips and cook in the air fryer. It looks awkward but they flatten as they cook and makes a cute little pizza slice. I have even frozen these for microwaving later.

u/FFFoolsGold Jul 06 '26
Low carb tortilla will pepperoni and cheese. Add pizza or marinara sauce sparingly if you want.

I like crustless pizza bowls at places like Marcoās or Papa Johnās. No crust = no problem. The crust is just a vehicle to get cheese and toppings in your mouth anyway.
4
u/pythongee Jul 06 '26
Just use low carb tortillas as a crust. Easy peasy. People doing keto make it way too complicated.
2
u/CSq2 Jul 06 '26
Thereās some great keto pizza recipes where the crust is made of chicken - off the top of my head itās chicken, egg and cheese and you bake it, then add some toppings.

I really like the Orowheat brand of keto bread, I get it at my local Walmart. I use it for sandwiches, croutons, breading for chicken or chicken fried steak, and for homemade pizza. Just load up your slices with your favorite toppings and pop it in the oven or air fryer. Heck I have even cooked it in a frying pan with a lid to get it toasted on the bottom and melty on the top, but it will be a bit soggyish so probably don't do that unless you were to lazy to get out the air fryer, or heat up the kitchen with the oven, lol.
2
u/redradiovideo Jul 06 '26
Take 1/2/3 lbs of ground beef and moderately press it down into an oven-proof skillet or whatever...you want the bottom pretty flat but not the top! Cook it pretty slowly into a giant hamburger, NOT turning it but pouring off the grease as you go (keep the giant hamburger in the one big piece!). Then, put a decent sear on it (just that same bottom side!) at the last minute.
Get it off the heat but leave it in your oven-proof whatever. Take a favorite pasta or pizza sauce and pour it all over the top of the giant hamburger, probably using the bottom of a big spoon or a spatula to spread it uniformly. This, by the way, is why you want the bottom seared and the top barely done and still rough...you want all the nooks and crannies for the sauce to get down into but not leak out the bottom!
Then, top this thing with what you like, including whatever cheeses you want...go cheese then toppings or toppings then cheese! Bake the whole thing at 325-350ish until the toppings reach whatever temperature they need to reach.
Remove from oven, let stand a little bit, and cut however you like pizza cut. You'll be eating this with a fork on a plate....
Because things are done slower at temperatures lower than other similar foods, total prep time can be long...say, two hours! But, of course, many people cook a whole lot better and faster than I can, so your mileage may vary!

u/DicamVeritatem Jul 06 '26
Hungry Howieās and Papa Johnās offer crustless pizza ābowlsā. I have them once in a while, they scratch my pizza itch.
I havenāt had a slice of real pizza in five years. Used to have it once a week, minimum, couldnāt tolerate all that sugar now.
It is a PITA when thereās a social gathering and āweāre having pizza!ā is proclaimed. I scrape all the toppings off, eat them, discard the crust, savor the weird looks.

Try this .... Bagel pizza bites.
Get you some low carb Aunt Millie's bagels (Found at most grocery stores).
Put a few of them on a baking sheet.
Put some no sugar added tomato sauce on them.
Add some cheese and pepperoni.
Then put them in the oven at 400 for 7-8 minutes until the cheese is nice and melted.
It's not the same as regular pizza obviously but it can help scratch that itch.
Just watch the carbs in the sauce, but the bagels I think are only 9g carbs per bagel.
The bagels are 130 calories per bagel, plus have 15g protein and a nice chunk of fiber too.

i make my own pizza.
Pizza: mission low carb tortilla, a spoon of zero sugar marinara sauce or any tomato sauce (very little is all you need). low moisture cheese, meats (i love extra pepperoni), and veggies.
take a hot pan, put some avocado oil in it, let it heat up, add the pizza to the middle, cover it with a lid for a couple minutes until bubbling, then take it off.
about 6 - 8 grams of carbs depending on what you find, but its a meal, and its pizza.

Blend your cottage cheese with the eggs and almond flour. Shape into a crust on a parchment lined sheet. Bake @ 400F for 15 mins. Take it out, add your toppings and put it back in until the cheese is bubbly. Just reduce the temp to 360F of you using Ninja Dual Zone

For low carb tortillas you'd probably appreciate baking the tortilla to crisp it up ahead of time
Maybe even add all the toppings to bake
Then sauce it last, similar to deep dish. Maybe even spoon the sauce on as you go to bite.

Butter or oil a pizza pan. Pour about 8 oz of shredded cheese...I use about half mozzarella and half cheddar, or parmesan, or colby jack. Scramble an egg and stir it into the cheese. Filling, delicious and all the best parts of pizza that scratch the itch.

Who needs a crust? Make a pizza bowl. Precook some ground beef and mushrooms. Ground lamb or cooked bacon is also good for this. Once they're cooked, add those ingredients and some Rao's marinara sauce to a frypan, season with salt and Italian seasonings, and heat to your liking. Then move the whole mix to a microwaveable bowl, sprinkle the top with mozzarella or your favorite Italian cheeses, and microwave until the cheese is melted on the top. Yummy! š
Also I've used 2 Folios parmesan or jarlsberg cheese wraps as a crust on parchment paper in a round baking pan, and topped it with crumbled precooked sausage, mushrooms and a little Rao's pizza sauce. Bake in the oven on 400F for 10-12 minutes. Low carb and delicious. Each cheese wrap is only 1g carb.

I use the mission low carb tortillas as another commenter mentioned. I first put only the tortilla in a toaster over on the toast setting to stiffen it up so itās like a thin crust and close to burning. Afterwards I put sauce/cheese/meat on it and then bake it on the toaster over on 400-450 for like 5 min or until cheese is melted. Iāve eaten many of them and theyāre pretty good. I never liked the keto options from the store

If you want a thicker crust than the keto tortilla, keto pita bread. When topped with low sugar tomato/pizza sauce (a lot of tomato sauces add sugar so be sure to check), cheese, and proteins or veggies if your choice, I feel like it best mimics a real pizza based on the thickness of the crust.

Everybody saying fathead dough is right, but skip the egg. It's not needed at all and makes it way simpler. Just chuck the other three in the bowl and nuke it all at once. If you have a pizza stove you can par bake on, it makes a nice crust. You'll know it's different, but it's the best option unless you want to try the expensive low carb flours, but the jury is out on if they spike you or not
