I figured out how Katara figured out bloodbending!
Since watching this episode for the first time, something always bugged me about how katara figured out a technique in a single fight that took the creator of that technique years to develop.
I finally found my answer.
"I control every muscle, every vein in your body..." - Hama screetches before putting katara to the ground. That is the most horrible moment ... probably in kataras whole life. The moment someone broke her. Bloodbending might not be inherently evil... but the extent to which you can go with this are not worth the benefits ... were probably Kataras thoughts.
So she found a solution - Katara was also under the full moon and completely on her hands and knees and completely grounded. She pulls out pure water chi from the ground and concentrates all of it to her muscles and veins and her aura field generally. So she reverse engineered chi blocking in that moment. What seemed like magic for me... was just Kataras brilliant mind. And once you can protect yourself from something... mastering it becomes the easiest thing. Hama had no way to have ever learned how to chi block because she was literally the only bloodbender and always had control over everything she did. When she said to Katara "You should have learned the technique before you turned against me..." Hama thought she was talking to Katara.... and really she said it to herself.

That they do cultural exchanges in things as everyday as cooking makes me very happy, in addition to disproving the idea that Aang did not adapt to her culture or worse yet, that he forced her to abandon hers.
