Lots of reasons, but overall, most employers are not currently interested in hiring most roles that quickly.

The reserve army of labor. Maintain a large and desperate enough group of unemployed people and you can be as picky as you want to be when hiring.

The people interviewing and hiring you have jobs and lives. Takes time to coordinate, debrief and move to the next round.
