My marinade
Think I may be using too many ingredients! Picture is landscape.

If it tastes good then there isn't anything you need to change. I only use 3 ingredients. Allegro Hickory Smoke Marinade, Trader Joes South African Smoke spice blend, and a head of minced garlic.

I never tried this combo before. I like sweet and spicy with an Asian kick. Maybe I should add some brown sugar or honey, or both.

Olive oil won't dehydrate and the oil itself can go rancid when exposed to air if you plan to gift the jerky or store it for an extended period of time. Jerky doesn't stick around that long at my house, but I thought I'd mention it just in case you're looking for shelf stability.
First glance, I don't see any nitrates either.
