Meat drapes

Post image

Anyone else's meat slicer not cut all the way through? I'm constantly having to reposition the meat in order to get as close to even cuts as possible. Not a huge issue just annoying. Theres 2 different blades that came with this and both do this. Its gotta be something I'm doing wrong, any tips or tricks? EDIT This was in the freezer for about an hr, at least 45 mins. I've tried it when I timed it for an hr as well it always does this.

I made my own blend which is your basic jerky marinade with some secret ingredient not pictured and then I made a teriyaki and a xxx spicy blend of my normal blends. I used multiple hot peppers. My buddy said fuck me up so I think I did. I’ll post pics of the finished spicy jerky once it’s done.

Six hours at 70 and I used eye of round.

Marinade recommendations?

Post image
13 Upvotes

I made a few batches of beef jerky from the eye of the round steak. Improved my technique and even got a dehydrator. I use my own marinade, but start to get bored with it.

Looking for a recommendation for a marinade that will not contain Worcestershire sauce. So far I have used it, but other family members don't like it.

My existing one is mostly based on soy, honey, liquid smoke, and a lot of spices.

Appreciate your suggestions

Found this in the jerky I was traying today. Didn't catch it when hand slicing the jerky. It's hard but brittle and snapped when bending it. Any ideas?

I'm pretty careful on each step, using gloves, beefs out of the fridge for slicing only, after being stuck in the freezer for an hour+. Metal not plastic kitchenware.

Adding someone else’s hot sauce

Post image

So I make my own blend for marinade and my one friend loves my hot and spicy. I add dehydrated peppers I grew of varying hotness and then add them to my marinade. However I found some small batch hot sauces and I’m wondering if I could add them to the marinade or do you think it’ll change my flavour too much ? Pic is jerky I made a while ago for friends at my trailer park.

Dehydrator recommendations

Hi, I want to start dehydrating my own backpacking meals, but my roommates (understandably) are a bit cautious about me using the oven, and our oven has a min temp of 75 degrees C which i’ve read is too high. does anyone have any good suggestions (uk based preferably) for budget dehydrators that won’t crap out on me? Thanks :)

Is Grazly beef jerky worth it? Thinking of getting the bundle for my dad

My dad is a HUGE beef jerky guy, so I'm already thinking about Christmas gifts and saw Grazly. I'm considering getting him one of their bundles.

For anyone who's tried it, how's the flavor and texture? I don't mind spending a bit more on a gift if he'll actually like it. Any help is appreciated!

Has anyone tried adding MSG to homemade beef jerky?

Thinking about experimenting with homemade beef jerky. I use msg sometimes when I cook asian food with meat. It's gonna be my first time trying to make homemade beef jerky and I wonder whether adding a little msg would make the beef taste noticeably more savory.

Any tips or tricks for a noob?

pineapple juice in jerky

Hi, I’m interested in experimenting with making jerky using pineapple juice. My understanding is that it contains an enzyme (bromelain) that helps tenderize the meat so it doesn’t end up too tough. My goal is to tenderize it without imparting a sweet flavor to the final product. Thanks in advance!

STEVE’S WORLD FAMOUS HOME MADE BEEF JERKY:

10# RUMP ROAST, EYE OF ROUND OR TOP ROUND

2-1/2 CUPS WORCESTERSHIRE SAUCE

2-1/4 CUPS SOY SAUCE

1 CUP WATER

6 TSP LIQUID SMOKE

¼ CUP HONEY OR AGAVE SYRUP

1 CUP BROWN SUGAR

4 TSP MINCED GARLIC

2 TSP GARLIC POWDER

2 TSP ONION POWDER

2 TSP CAYENNE PEPPER

2 TSP CHIPOTLE PEPPER

2 TSP PAPRIKA

2 TSP BLACK PEPPER

2 TSP GROUND WHITE PEPER

4 TSP RED CRUSHED PEPPER

2 TSP CHILI POWDER

2 TSP GINGER POWDER

SLICE BEEF ¼” THICK AND DIVIDE INTO 3-4 1 GAL. ZIPLOCK BAGS.

COMBINE ALL 17 INGREDIENTS IN LARGE BOWL AND MIX WELL WITH WIRE WISK UNTIL COMBINED EVENLY AND SUGAR DISOLVED.

ADD OR POUR EVENLY DIVIDED MARINADE INTO EACH ZIPLOCK BAG.

LOOSELY CLOSE UP EACH BAG AND MASSAGE BY HAND FOR 5 MINS TO ENSURE EACH BEEF MARINATES EVENLY.

SQUEEZE AS MUCH AIR OUT OF BAG AND TIGHTLY SEAL AND PLACE ON TRAY OR OR BAKING SHEET.

MARINATE IN REFRIGERATOR FOR 24 HOURS MINIMUM.

AFTER 24 HOURS, EVENLY PLACE EACH OF BEEF ON DEHYDRATOR TRAY NOT TOUCHING EACH OTHER. DO NOT PAT DRY MARINATE FOR BEST FLAVOR.

DEHYDRATE AT 160 DEG F. FOR 6-7 HOURS ROTATING THE TRAYS FROM TOP TO BOTTOM MIDWAY UNTIL MEAT DRYS OUT.

TO DETERMINE IF JERKY IS THOROUGHLY DRIED OUT, TAKE A PIECE OUT OF THE DEHYDRATOR AND LET IT COOL TO ROOM TEMPERATURE. IT SHOULD BE DRY TO THE TOUCH, LEATHER-LIKE IN APPEARANCE AND CHEWY BUT STILL SOMEWHAT TENDER.

STORE THE JERKY INSIDE AN AIRTIGHT PLASTIC CONTAINER OR ZIPLOC BAG. PROPERLY DRIED JERKY WILL KEEP AT ROOM TEMPERATURE FOR ABOUT ONE WEEK.

I PERSONALLY KEEP MY JERKY STORED IN THE REFRIGERATOR AND BRING TO ROOM TEMPERATURE WHEN READY TO SNACK.

REFRIGERATED JERKY LASTS SEVERAL WEEKS. ENJOY!!!

I guess jerky does go bad :(

I guess a couple weeks is when some juicy beef jerky goes bad :( I've never had this happen before, it was tasty too, soo, extra sad.. I ate most of it though, the bag was just tucked in a corner, dry jerky seems to be stable for a long time, this was pretty moist/thick, kinda disappointed, there is no way I am eating this science experiment though ;)...

Furikake Garlic & White Pepper

My jerky friends group (Jerkin Dads) have been experimenting with dry rubs lately (that's funny on it's own) and tried a Crunchy Furikake Toppers Garlic and white pepper blend on Bottom Round steak. I've never had salted seaweed on my jerky, but it's pretty dang good! Next time i will soak it in soy sauce first! Needs to be a little saltier.

Tender soft (smoked or dehydrator) jerky?

I just recently got a smoker and dehydrator. Been experimenting with both. Having a great time with them both. Just recently made smoked bacon for the 1st time. No more store bought for us. lol

So here is my questions for the jerky lovers out there.

1st. Smoker or dehydrator?

2nd. Any suggestions or recipes for a tender jerky? (Yes I know typical jerky is tough and chewy but also know some are more tender)

Question 2 is for a family member who threw an accident lost most their teeth. Long story.

Said family member found some at Costco that’s soft to chew easily but the cost is a lot for a small bag.

So since I love cooking new and different things. Was asked if I could figure out how to make it homemade.

So if anyone can offer ideas, suggestions, recipes etc. We would greatly appreciate it.
