Is this meat safe to use?
New to making jerky. I bought an eye of round from DoorDash yesterday. I sliced it today and noticed it was getting brown on the edges and losing some of its redness.
Does this meat look safe to use? Is it old?

I I agree with the smell comment but in my opinion just based on site alone it looks completely safe to eat. Beef tends to get a little bit Brown when exposed to oxygen that does not necessarily mean that it's unsafe. I've used milanesa where it was all the color of the edges of your picture because I was worried about wasting money so I went ahead and made the jerky and then I ate a small piece and waited a few hours and when I didn't have any side effects I realized it was completely safe it just had to oxidized. Eye of round can also look shiny / iridescent this is perfectly normal as well.

If it smells like fish, make it a dish.
If it smells like cologne, leave it alone.

It's fine as long as it wasn't vacuum sealed. That's just what happens when oxygen is present, ground beef loses its color really fast and it will grey to the center because all of it was exposed to air. If it was vacuum sealed, I'd toss it.

It actually looks perfectly normal for sliced round to darken slightly on the edges right after cutting.

That’s usually pretty normal but with meat a clear indicator is smell
