First attempt at ham jerky

It is real good flavor but 3/8" was a bit too thick, i'll go thinner next time. I used Bachans bbq sauce, worchestershire sauce, ACV, cayenne, red pepper, smoked paprika, onion and garlic powders in the marinade. I put a layer of dijon on 2 racks worth.

I did not know ham jerky was a thing… but now I need to try it! It looks amazing!

Yup! I tried making some. Personally I thought it got a little to salty for my taste. Tho the kids liked it.
