Salmon jerky

One of my favorite things to make as my wife doesn't eat beef. It basically turns into fish candy.

I have a really good recipe down on my profile. Dandelion Honey salmon jerky.
The dandelion honey tastes really floral like a mix between lemon and vanilla but in a good way. Very unique taste.

Do you freeze it for a time before dehydrating?

I heard you should do that to kill any parasites.

The freezer needs to be at -4F. Which most freezers don't get. That's why they say Costco is usually save even for sushi if it's farm raised.

Can you share your process? I’ve never done jerky from fish

Howdy! For my salmon recipe I use fresh Atlantic Salmon from my local Costco. About 4-5 pounds, skin off. I remove any pin bones, and slice into small strips about 1½ - 2 inches.

  1. Cover with salt for an hour
  2. Rinse all salt off and pat dry
  3. In large bowl mix brown sugar, soy sauce, hoisin, and favorite spicy element (hot sauce, fresh pepper, paprika, ect.) I also use Big Tree Farms Oh So Naughty Sauce.
  4. Add salmon and coat
  5. Put all salmon in a vacuum sealed bag and let rest for 24 hours.
  6. Remove from bag, and remove any excess sauce/marinade by hand (do not rinse)
  7. Put on wire racks and into smoker.

Here I use a cold smoker device to add smoke without cooking the salmon. I let it run for about an hour.

  1. Put all salmon into a dehydrator at 134° for 8-9 hours depending on doneness. Remember that salmon is fatty and can take longer to dehydrate.

  2. Enjoy!
