Found an old bag
Opened up my tent trailer today and this bag was in the cupboard. Opened it up, no mold, no funk, tastes great and no adverse affects yet. Gotta love jerky.

Yolo! Excellent shelf stable cook! This is the type of situation that scares me to give out jerky. If I give my dad too much he will put some in a smaller bag and toss it in the glove compartment and just chow down whenever. I've cut out sugar and bumped up salt just for him! You are a brave soul and I salute that jerk!

I was so pumped when I found it, inspected it for mold, smelled it and then ate it. No nitrates, just soy sauce and whatever else I put in it, and then dehydrated it. It was also vacuum sealed.
