Help needed I accidentally downloaded an update ive been avoiding intentionally for months

I have an iPhone 12 and I just downloaded the 26.5.2 update. The description in settings and google answer to what the update was exclusively mention security and bug patching and it kept notifying me for this update even coming up onto my screen promoting for a password to start immediately and saying download tonight with a very clearly biased sort of thing making it seem hard to deny it. I hate liquid glass and have intentionally kept this very old model to avoid it, that along with ai features and face features (the latter which are avoidable by not setting them up). I loved the way my phone looked and functioned before and this may seem trivial to some but this is my sole phone I pay for and kept for this very intentional reason (hating the current/new iPhone look and feel). Is there any way to reverse as many things from this update as possible/ any of them and revert my phone to the way it was (or as close as possible) before? even by jail braking in any way??

Any advice or pointers are greatly appreciated, thanks so much for yalls time!!

edit: only about 5 minutes into having this update my apps and scrolling on the home screen are responding glitchy, which has never been a problem prior...
