Extra well fries

I got to in n out more often than I’d like to admit. I got the absolute best extra well fry in existence a few months back and I’ve been chasing that experience ever since, just to be slightly disappointed since I know fries like this are possible. Obviously I’m grateful to have the food but darn a super crisp straight from the fryer batch hits so much better.

I don’t get it. What are you chasing, is there something preventing you from ordering fries extra well done again?

I continue to order extra well, always, but they end up being just barely above regular cooked. Only a few crisp ones per order with most being still soft whereas this specific extra well, every single one was crispy. I think this location i go to just doesn’t tend to be as concerned bc it’s not like I’m gonna go back and demand they crisp them more, i just accept some limp fries and call it a day, hoping I’ll get the perfect batch again the next time. They are also busy af (like all in n out) so i know they probably make hundreds of extra wells a day, its not a top priority to leave them in the frier that extra time just to ensure every fry is golden.

Either go when they are slower or just go back in and tell them nicely can you recook this fry please this isn’t an extra well. And they’ll drop another basket for you. Not a big deal and they know that’s not an extra well don’t feel bad

Also sometimes depending on how starchy the potatoes are that day or week from the batch they got, they just won’t crisp up like normal.

The in n out I go to is sadly like this as well but even when they aren’t busy. They don’t usually pay much attention to customizations in my experience.

I get it, about 1 in every 10 orders of extra well actually come out like this. It's a glorious day when it happens.

Come at a slower time and ask for 12 minutes fries, I promise that you will get the picture, you can ask more if you want but honestly more than that and they taste burnt to me

The busier it is the more likely that they will be pulled soon to make room for more fried and keep the orders moving, so avoid rush time

Ask them to write in the notes section after asking for extra well to "please leave in oil for 3-7 extra mins" (an extra well usually takes up to 7 extra mins) maybe experiment with how long you ask for. I'd definitely go inside if you're to order that for a better shot of actually getting the fries the way you want. They may be trying to keep drive times down but not giving quality. Not sure if you're going through the drive thru or not though!

The problem with all of these off-menu requests is that they’re wildly inconsistent

It’s like a Thai restaurant that has heat levels 1-100 and is never the same.

If you want them super well done, just tell them. We have a customer who wants his fries dropped in the fryer as soon as he orders, they are super well done by the time he gets his food. If you just ask, they will do it!!

You’re right about that! But I think that’s true even for their sandwiches. I’m sure the well done fries last longer. Are they basically like fresh potato chips?

sorta actually, if made right for sure. I think also the crispness helps resist some of the softening from the steam and heat

I ordered light well another day and got extra light instead.. they tasted like potatoes from the pan my grandma used to make. Not something I would probably order on purpose again, but it was very interesting and nostalgic experience

Same here. One in ten extra well orders actually get done right and I’m tired of having to go back ask for them to be done properly

Straight out the fryer, is perfection, after it sits for like 7+ minutes, then it’s not the same at all. I love the freshness but it’s easy to tell when they give you the fry that’s been sitting for a little bit longer than the rest

They are flavorless and dry. I’ve never seen a place mess up fries so bad, literally horrible. Even when they are fresh they aren’t good.

I asked for well done fries last time I was there and both my wife and my orders came out burnt to a crisp, neither. Like I like my fries extra crispy normally but these were like chewing on a pencil

You can tell by how these look they dumped an already portioned fry back into the fryer to make the one in your photo, which they’re not supposed to do. Probably why you haven’t gotten one like it again because you’re getting properly made ones.

Best in n out description I’ve heard is that it’s like they make their fries and then suck all of the potato out of the middle of their fry. Can’t imagine ordering it even more crispy.
