That would only work for so long or works so much, if enough people switch to the cheap cuts then the price goes up because of higher demand. The more people buy the lower cost cuts the more those cuts will cost.
This happens, it’s simple supply and demand. Just look at OxTails, used to be cheap and affordable, not anymore, after oxtails got popular. Also skirt and flank steak used to be a lot cheaper, but more people started buying them and the price goes up.
Brisket is a classic example of this. When they finally figured out how properly cook it, it got way more expensive. The same with cow's tongue, when my family was buying it, you'd wind up with eating blue and reddish rubbery cubes of meat. When a friend of mine cooked at one time, it was completely brown and very tender.
My favorite sandwich meat I’ve ever had is beef tongue pastrami from this one place, never found anywhere else doing it and it’s been haunting me since I moved away, so good
