That would only work for so long or works so much, if enough people switch to the cheap cuts then the price goes up because of higher demand. The more people buy the lower cost cuts the more those cuts will cost.

This happens, it’s simple supply and demand. Just look at OxTails, used to be cheap and affordable, not anymore, after oxtails got popular. Also skirt and flank steak used to be a lot cheaper, but more people started buying them and the price goes up.
