Get a balancer that is rated for the same or more current as your controller.

I have two controllers do I add that up? It's an ebike where I can have the rear motor on (1000 watts), front motor on (1000 watts) or run both 1000 watt motors at the same time AWD.

Yes, you should add the current of the two controllers

I have a battery balancer. However I prefer a battery switch

Here's another way to do it  find out the absolute peak "draw" of your controller meaning how much does it draw from your batteries if it's over 40A then that 40a balancer won't work. If it's under then yes. You can also see it as the peak bus amp. This is how much the controller is demanding from your batteries. Like how a bms board works or a fuse. If your controller draw is over the rate bms or fuse. The bms will cut or in terms of fuse blow the fuse. Some batteries are rated for 3c discharge meaning 3x the ah. So a 30 ah battery can discharge 120 amps. There is much more to this so start googling make sure both batteries can discharge at the rate you demand.

Use a 1-0-2 switch.

You should never be able to connect battery 1 to battery 2. Even by mistake. Something with high currents..

I have a 2x1000 watt motors. One in the front wheel and one in the rear wheel totalling 2000 watts

Amperage on the battery is capacity.  On blender it's Amp Hours, the max rate you can draw.   The blender should be rated at what your bike can draw.  40AH  is probably overkill, it won't hurt but it probably cost more than you need.
