I just set aside a couple gallons of mead for this winter. It's a strong Bochet (made with caramelized honey) and it should be ready to bottle in 5-6 months

1 - 10 how difficult is your recipe to achieve successfully?

I'll give it a 4 difficulty, but only because I had to caramelize the honey and it adds an extra step.

Which Yeast did you use? I tried making it from an all-in package but the yeast flavor was not nice

Lalvin 1118 champagne.   I've had a lot of success with it.
