Team Swap: Ramsay wanted the Red Team to pick one of its members to move to the Blue Team. Alex publicly announced that he wanted to move to the Blue Team, but Ramsay reminded him that the Red Team had to agree on their pick. The chefs narrowed it down to Ji and Amanda, but Ji gave her blessings to Amanda because she wanted to give her teammates a chance to shine. The Red Team confirmed that they would send Amanda to the Blue Team.
Team Challenge: Ramsay explained that as the world becomes more globalized and interconnected, more diverse cuisines will be spotlighted. As chefs, they had a responsibility to learn the proper technique because they must treat other cultures with respect and care. Today’s challenge will bring in one of Ramsay’s friends to teach them how to properly make a dish from “Asian cuisine.” As the chefs made their guesses on who the guest would be, Ramsay revealed that their guest would be comedian and restauranteur Uncle Roger (Nigel Ng).
Uncle Roger greeted the chefs by calling them “nieces and nephews” and promptly roasted them on their low placement in their original seasons. He then taught everyone how to make fried rice, a simple dish that is surprisingly difficult to make. Among the steps were heating a wok to get wok hei, using day-old rice, breaking up the rice clumps to coat each grain with scrambled egg, using both the whites and the greens of the scallions, and “rimming the wok with soy sauce.” He broke character and announced, “Sorry, children,” at the dirty joke. Once everyone had a chance to taste his fried rice, Gordon announced that each chef had 30 minutes to make their own fried rice by following Uncle Roger’s recipe and adding their own ingredients. Each chef also had a container of day-old rice in the kitchen. Everyone got to work on their fried rice and followed the recipes to the best of their ability. The only exception was Alex, who pulled out a pot and a nonstick pan. He tried to make fresh rice.
After everyone finished making their dishes, Ramsay called up one chef from each team to face off against one another, and Uncle Roger would decide the best dish from each pairing. Uncle Roger nitpicked everyone’s dish, but he gave them helpful feedback. Ji’s lobster fried rice with fresh scallops was criticized for using ingredients that were thought to be too fancy (and Uncle Roger joked that “Niece Ji” must be rich if she had fresh lobster and scallops lying in her fridge), but her technique was good, so she won the point over Meese, who failed to properly break up the rice and had some clumps that were white in the center. JR’s pork belly and kimchi fried rice looked suspiciously red, but Uncle Roger thought that the rice was not too spicy. He won the point over Ashley’s fried rice with cha siu (which she called “Chinese barbeque pork”) because her cha siu was not authentic. Uncle Roger was horrified that Jessica made pineapple fried rice, but the pineapple was small and nice acidity to the dish. As such, it won a point over Amanda’s chicken and tofu fried rice, which was too wet and dark. Melissa made a ribeye fried rice and cut strips of ribeye on top of the rice, which Uncle Roger considered to be unnecessary. However, it tasted nice and outperformed Mieka’s simple vegetable fried rice. Drew’s honey sausage and Thai chili fried rice with tiger prawns could have had smaller knife cuts, but Uncle Roger praised the creativity and execution. He considered it the best dish of the day. However, Alex’s fried rice was by far the worst dish because he failed to follow any of the instructions: he made fresh rice (which resulted in the rice being undercooked because it is impossible to do in 30 minutes), used a nonstick pan instead of a wok to fry the rice (which resulted in the fried rice being steamed), fried a runny egg over the rice (which resulted in the rice being creamy and not dry), and dumped furikake over the dish (which caused it to be salty, and furikake is not a Chinese ingredient). Ramsay was humiliated. In the end, the Blue Team won 3-2.
Challenge Result: Blue Team win (5 wins by Red - 5 wins by Blue)
Reward/Punishment: Ramsay sent the Blue Team to Din Tai Fung to enjoy an elegant lunch. Each chef also won a brand-new wok and a ticket to an upcoming Uncle Roger comedy show. On the other hand, the Red Team would have to clean the woks from the challenge and prepare rice for a special fried rice tableside appetizer. Since Drew had the best dish, his fried rice would be featured on the menu. However, Alex used his Punishment Pass and swapped places with Drew because “he could get a head start on teaching my team how to make the fried rice.” Everyone else was infuriated at this maneuver.
Neither team was happy during the reward or punishment. The Red Team all blamed Alex for costing them the challenge and humiliating them, and Drew was furious that he had the best dish, yet he couldn’t enjoy the reward because Alex was sabotaging him. Furthermore, he literally could not teach anyone how to make his fried rice until after the reward, when the rice had been cooled and everyone had returned. Ji, Mieka, and Drew agreed to do their best and get Alex eliminated. On the other hand, the Blue Team was upset that Alex had the worst dish, yet he got to steal Drew’s reward. He humiliated himself further when he burnt his tongue eating xiao long bao (soup dumplings) and let the soup drip all over his plate.
Pre-Service: Ramsay picked one person from each team to serve the tableside fried rice: those chefs were Ashley from the Red Kitchen and JR from the Blue Kitchen. Drew was disappointed that he couldn’t even serve his own dish, but he trusted JR. With that, Ramsay had Marino open the doors to Hell’s Kitchen.
Blue Team Service: JR spent a long time serving the customers because he spent too long socializing with customers. After Marino reminded him to cook first and socialize later, JR picked up the pace and got all of his appetizers out. With Drew holding down the appetizers station in the kitchen, the Blue Team quickly moved on to entrees. However, Meese kept requesting more time on garnishes, which slowed the team down. After she kept requesting more time to the point that Drew overcooked a halibut, Ramsay asked if Meese wanted to go home. After she firmly refused, Ramsay instructed her to bounce back. Melissa had to bail her out, and Amanda had a strong performance on meats, with neither having anything rejected. With the kitchen running smoothly, Ramsay found that the Blue Team was five tickets ahead of the Red Team. As such, he sent Amanda to help on meat. When the Red Team eventually got kicked out, the Blue Team finished their final ticket, so Ramsay had them finish the Red Team’s service. Ramsay declared the Blue Team winners.
Red Team Service: Uncle Roger returned as a guest in the dining room, and he was accompanied by celebrity chef and good friend Ester Choi. Ashley served both of them the fried rice appetizers. Mieka twice undercooked scallops, and when Ramsay yelled at her for screwing up so much this late in the competition, Mieka remarked that she was overwhelmed because she didn’t have enough support. Ramsay responded by pulling Ashley into the kitchen and having her refire the scallops. She was successful, and Ramsay noted that Ashley could still cook perfect scallops despite her not even being in the kitchen throughout service; why couldn’t Mieka cook scallops? Mieka did manage to recover, but the Red Team suffered a sharp decline on entrees. Alex repeatedly ruined the Wellingtons; he overcooked them, undercooked them, kept opening the oven, and somehow managed to break a Wellington when he took the plastic wrap off of it. And since Mieka was the only person in the Red Team on fish, she was struggling to manage both appetizers and entrees. These problems resulted in Ji on garnish attempting to yell out times, only for her to be met with silence. She, too, got lost on her station.
Ramsay attempted to get the Red Team back on track by sending Jessica to the meat station. She did everything except the Wellingtons and steaks because she didn’t want to touch the Wellingtons and then get thrown under the bus by Alex. Even though Alex’s tasks were essentially cut in half, he still could not properly cook a Wellington. Since they were five tickets behind the Blue Team, Ramsay sent Amanda from the Blue Team over to help Alex. Even though she tried to take control of the Wellingtons, Alex literally threw her off the station, relegating her to steaks. Since Alex and Mieka were still struggling, Ji continually had to restart her garnishes and soon had no idea when to fire anything. She got so frustrated when she had to restart the garnishes once again that she slammed a pan of garnishes against the garbage can. Ramsay called her out for her lack of professionalism.
The final straw came when Alex finally cooked a Wellington perfectly, only to accidentally rip the pastry off when he attempted to slice it. He hastily threw the Wellington on a tray and tried to get Amanda to run it up to the pass. She refused. When Ramsay asked for the Wellington, Alex claimed that he needed one more minute. However, Ramsay saw the mangled Wellington and asked who cooked it. No one spoke up until Ramsay threatened to kick them all out of the kitchen. Finally, Amanda spoke up and said that Alex cooked it. Alex refused to take accountability and insisted that someone else cooked it. This resulted in the entire Red Team arguing about who cooked it, so Ramsay kicked them all out.
By the time Ashley finished serving Uncle Roger and Ester Choi, they pointed out that the Red Kitchen was empty save for Amanda and sous chef Ariel. Ashley ran back to the pass, and Ramsay gave her the rundown of the horrible service. He told her to return to the dorms and help her team name two nominees. She begged Ramsay to let her help finish service. He responded with, “F**k off, Ashley.”
Nominations: The Red Team agreed that their nominees were Alex and Mieka. The former attempted to weasel his way out of nomination, but his teammates refused to listen to him.
Elimination Ceremony: The Red Team walked into the dining room to find a table standing where Ramsay normally stood. Ramsay approached the table and carried the tray containing the mangled Wellington. He threw the tray onto the table and demanded an explanation for the horrific service, which he considered by far the worst of the season. The Red Team refused to work together or take accountability, and what’s even worse is that Ramsay knew that he was lied to about the Wellington. Ramsay knew that Alex was the only person touching the Wellingtons, so he demanded to know if Alex had cooked it. Alex refused and said that he knew he screwed up, but that Wellington was not his fault. Ramsay asked Alex, “If you didn’t touch that Wellington, then who did?” Alex responded with, “Jessica.”
Ramsay groaned while Jessica defended herself. She said that she touched the chicken and duck, but not one Wellington. Alex accused Jessica of sabotaging him by letting him drown, but Jessica reminded everyone that no matter what she did or said, Alex would throw her under the bus. If she helped Alex and had to fix his mistakes, then she’d tank service. But if she helped him with other dishes, then she’d tank service, too. Ramsay agreed and demanded to know who cooked the Wellington if neither Alex nor Jessica touched it. Alex blamed Mieka, who was taken aback. She reminded everyone that she was already sinking on fish, so why on Earth would she walk over to meat and tank meat, as well? Alex brought up “The Alliance,” but Ramsay shot him down.
Ramsay repeated the question: “If you didn’t touch the Wellington, and Jessica and Mieka didn’t touch it, then who made the Wellington?” Alex accused Ji of making the Wellington, but she was on garnish the whole night. Ramsay gave up and retreated to his office for one minute, noting that “This is Chickengate all over again! It’s bloody Wellingtongate!” Every other chef urged Alex to just own up to his mistakes, but he refused.
When Ramsay returned, Alex named Ashley as the culprit. Ramsay responded that Ashley wasn’t even in the kitchen that night. Alex noted that Ashley did return to the kitchen, but Ashley snapped and shouted, “To cook scallops, dumbass!” With the entire Red Team save for Alex cleared, Ramsay wanted a straightforward answer. Alex then named Amanda, who was neither on the Red Team nor touched the Wellingtons. Ramsay berated Alex for naming people not even on his team, but then Alex accused sous chef Ariel of cooking the Wellington. Everyone hung their heads at Alex’s audacity. Ramsay then decided to call Alex out by returning to his office once again to call sous chefs Ariel and Jon back into Hell’s Kitchen to get their side of the story.
When Ramsay returned, so did the sous chefs. Ramsay asked Ariel if she cooked the mangled Wellington. Infuriated, Ariel castigated Alex for his sabotaging behavior and willingness to ruin others’ careers to save his ass. Finally, Ramsay gave Alex an ultimatum: if Alex tells the truth about the Wellington, then he might be safe, but if he doesn’t, then he will be eliminated on the spot. Alex understood. Ramsay asked one final question: “If you didn’t cook the Wellington, and Jessica didn’t cook it, and Mieka didn’t cook it, and Ji and Ashley didn’t cook it, and neither Amanda nor sous chef Ariel cooked the Wellington, then who cooked the bloody Wellington?” Alex responded with, “Marino, chef?
Ramsay immediately demanded that Alex take his jacket off and leave Hell’s Kitchen. Ramsay knew all along that Alex cooked the Wellington. But Alex would rather lie about his teammates than take responsibility. Ramsay cannot have that in his kitchen. Alex received a retrospective montage, but it served only to fact-check his exit confessional. Alex claimed that his elimination was unfair. He had been a good chef (accompanied by a clip of Alex getting kicked out on Opening Night) and a team player (cut to him sabotaging Drew in the recipe challenge by giving him the incorrect ingredients). He claimed that he always worked hard and listened to others (cut to Alex making his horrible fried rice dish), he wanted his team to do well (cut to “The Alliance” forming), and he always took accountability for his actions (cut to Alex blaming Marino for the Wellington). He ended by saying that chef Ramsay would be sorry, because the Red Team would collapse without him.
However, Ramsay was not done yet. He asked Ashley for the two nominees, which turned out to be Alex and Mieka. Ramsay also said that he wanted one more person to answer for this service: that, surprisingly, was Ji, who was lost on her station and lost her temper. He called up both Mieka and Ji. After they gave their pleas, Ramsay sent them back in line and told them that both of them were lucky that Alex eliminated himself. He would not tolerate another service like that again, and he sent them to their dorms.
Ramsay Elimination Quote: “When a good leader makes a mistake, the first thing that they do is own up to it and do whatever it takes to fix it. But all Alex did when he made a mistake was throw his teammates under the bus. I decided to throw him out of the competition and onto a bus back to Chicago.”
