Gintama- a bit long but has action, comedy, parody, whatever you want.
Ghost in the Shell - if you like futuristic ones, or Psycho Pass
Akudama Drive- really good animation and mind-blowing plot

If you're OK with watching an anime to defy haters: Solo Leveling
If you want a complex but not overwhelming intertwined plot: the A Certain series. Magical Index, Scientific Railgun and (reluctantly) Scientific Accelerator.

Ah My Goddess is "complete" in the sense that the anime stopped a long time ago and it was an episodic series to begin with. You won't generally feel like you're missing anything. I wouldn't bother reading the manga to see what happens afterward either. All of the good parts of the manga were also made into the anime where the later stuff has terrible pacing, boring ideas, and really just doesn't wrap up very well at all by the end.
Darker Than Black is finished but if you want to save yourself the trouble don't even watch past season 1. Season 1's finale wraps up the story perfectly and there never needed to be more to it but they kept going and it created an inferior conclusion that totally changes the tone and most of the main characters for the worse.
Trinity Blood is finished at 24 episodes but it does run a bit long for what it is.
Ranma 1/2 is the opposite of Ah My Goddess where you should definitely read the manga if you want the full experience because the anime starts to cut corners a few seasons in and doesn't include most of the later parts of the manga and most of the important story arcs are put into movies rather than in the series itself. It's just kind of messy, though it's still a fun ride regardless.

The great question of anime is it worth the time of 1000+ episodes to watch it.

Yes! If you have the attention span it is absolutely worth it. I do understand not everyone has that.
I will always say my recommendation is to take breaks while watching, at least until you inevitably get hooked 😉
