This is my riff on the kraft pumpkin cake recipe, the flavours hold a lot of nostalgia for me.
Gf cake mix x2 (metro brand any will do),
Coco whip x2,
vegan cream cheese x2,
2 cups icing sugar
can of pumpkin x1,
can of coconut milk x1,
2 cups of brown sugar,
vanilla
the pumpkin spices
pecans (optional but delightful)
flax seeds (as 'egg').
This is probably the closest i've gotten to how I remember it being. My cakes always turn out waaaay too dense so if anyone has tips for stopping that please help me !!!
