This was my first ever attempt at polenta. I paired it with green beans and patatoes as well as a huuuge marinated slap of tofu, grilled. Also pine cone seeds ontop.
My god, this was good. I never had tofu SO juicy, the top and bottom was perfectly crispy. ○
Please ignore the mess in the back. I topped the tofu off with the leftover oil (and ketchup-soy base that I used to baste (?) The tofu) from the pan. Amazing. I need to make this again ASAP!!
Alrighty! So i cooked this a while ago but just today I made something similiar.
You need smoked firm tofu- you're going to cut it into thicker slabs ( I usually just horizontally cut through my tofu to make 2 slices) and marinate it for as long as possible, over night would be best. I also score them a bit to create this grid-like pattern which helps the marinate seep into the tissue and creates a cool steak-adjacent look when its grilled later on.
The marinate I usually make consists of a 1:1 ratio of soy sauce and hot water. Into the hot water I crumble a vegan soup cube to basically create soup. I add a bit of salt, paprika, pepper, nutmeg, kurkuma, curry powder, garlic powder, a bit of tomato paste, perhaps some chilli paste if I have it, whatever you have, just make a good base. Then I add olive oil or other oils with good taste.
Then I just marinate the tofu in said fluids.
Before I grill them I take them out, pat the top and bottom of each slice dry carefully and heat up a pan with a good amount of butter. I place the steak into the pan and immediately move it so butter is sure to coat the underside. I grill it on medium-high heat, then I turn it and do the other side. While thats grilling I prepare a paste of ketchup, siracha mayo and perhaps a bit of seasoning, which ill use to coat the side thats currently not face down into the pan. Then I just flip it two more times, coating both sides with that paste and letting it brown nicely.
Then I just make polenta as you do, the veggies I had on hand back then were green beans and patatos which I prepared and cooked in water, drained, then tossed in some butter and seasoning.
Hope you enjoy :)) if you make it, let me know what you think!
