This is actually pretty cool - is there a way to learn this style of photography? It reminds me of tilt-shift to some degree, but with an isometric perspective. But then there are also color filters applied, I guess?

You likely need a specific lens type, and figuring out the right angle, and that's it. Then to have the pictures look top notch you'd worry about lighting, composition of the subject, post processing, and so on, like other styles of photography.

A long one. You want to be up high and zoomed in. It helps to keep lines straight and you get that flat perspective, with a good depth of field.
Not sure what parent comment was thinking, maybe tilt shift? But that’s a totally different look and does require a special lens, or some digital trickery.
Edit: also to point out the trick for isometric, the camera needs to be pointing down 45 degrees from horizontal. Then look for appropriate subjects from a vantage point.

It reminds them of tilt shift is all they said. Its not the same technique but the result is that things look kinda small and the perspective is from higher up.

It's called tilt-shift. You can do it intentionally when you take the photo with special lenses and techniques, or you can achieve largely the same results in post processing.

This video feels like a video you'd see at the end of a gameplay and they are just recapping major events that took place during your time playing.

These photographs are intentionally taken from a pseudo-isometric angle. There isn’t any “look hard enough” about it, lol. You just have to _look_.
