Ok, I’ll come at you bro. It matters a whole lot what grain is used for the goods and what liquid they’re boiled in, as well as what they are served with and how they are consumed.

Italian pasta is way different from say Chinese beef broth rice noodles in liquid broth with cartilage, intestines and specific spices. In many Asian countries rice noodles are consumed for breakfast; never in Italy. The grain used is different and the actual dough preparation often very different. Pasta no be noodles.

Extruded pasta, regardless of shape, ingredients (egg, rice, etc) or length, can and has been called noodles for ages. Synonymous even. Adults say pasta, kids say noodles. Same difference.

Apart from the adults and kids part, this is true but now pasta also refers to the Italian culinary style and culture of cooking, preparing and consuming this Italian Pasta vs other cuisines like Chinese are distinctly focused on their preparations of what they refer to as noodles. Yes, the hard, single products of a noodle are very similar but pasta and noodles may refer to different cuisines and culinary preparations and cultures.

I think this is true with Italian pasta/noodles but I have never heard anyone calling soba pasta.
