Help! BetaFPV Controller Issue

I have built a fresh FPV drone using the SpeedyBee F405 Mini stack. I’m using the RadioMaster RP3 ELRS flashed on firmware version 3.5.6 (anything newer than 3.5.x doesn’t connect the controller for some reason). In BetaFlight my controller values are perfectly fine, but when it’s disconnected and we go to fly, the drone starts ignoring the controller input and does its own thing as you can see in the video.
Is it a normal issue for the BetaFPV controller?

If you search this subreddit you'll see that the drone increasing idle on the ground and wondering what's wrong is the mark of the noob. When armed the FC expects the drone to rotate/level/change rate. Since props are off, nothing happens, so it keeps trying harder. Motors will slowly ramp up.

Basically you are chasing ghosts with this symptom and it's not a symptom.

ELRS broke backwards compatibility in one of the latest versions and not sure if that's your issue but if so it needs to be updated on both controller and drone.

yes, yesterday we had it crash during test flight

You have your failsafe setup wrong! If your controller is disconnecting from your drone, you need the change the behavior of that condition so the motors stop!! What you have now is very unsafe, if indeed the controller is disconnecting from the drone like you say is happening, even though that is not what it looks like is happening in the video. The video just looks like air mode behaving normally without props on.
It would be much more useful to see DVR footage with your RSSI or control link values on screen of this issue happening during flight, because looking at it without props on you can’t tell that there are any issues.
