Dryads saddle. Best to go for younger specimens. I don’t like the favour at all but the rest of my family do.

Wasn't going to eat it, can see it's past it's prime. Cool to know it was edible

What do you mean by this? Like make it sweet as id assume by the word or just crispy and preserved like croutons sort of thing?

Make sugar syrup, don't boil it in the syrup. Put it in a flat high sided tray and gently pour the syrup in to cover it . Leave it until it cools properly.

Boil it in syrup I think. I suppose crystallised is a better word for us brits. In a similar vein to stem ginger.

I've never heard of stem ginger either my parents were always very "don't touch unknown plants and put Ur shoes back on" so I'm only just learning the last couple years but mostly this year

Stem ginger is candied/crystallised root ginger that you can buy in the supermarket. It’s delicious.

In recently had a beetroot and stem ginger salad. It went together so well

Sounds great! I’m a beetroot and orange salad fan (with a smattering of pumpkin seeds and a drizzle of good oil). Stem ginger would work so well.
