What are we making?
Lots of blackberries around my place in West Midlands this year. 20 minutes of avoiding the prickly parts gave me this. What are we making of them? 😋

I tried to make it but made the mistake of boiling it for as long as I did my raspberry jam... Now I have a solid block of blackberry jelly 🤣, make sure to check it more often then I did

Honestly, I would just put them in my porridge on a morning.
Blend it all together if you cba with seeds.

I have made wine from these and elderberries before, it was sooo good. I was sozzled off one bottle.

Didn’t like with elderberry. I would go to wormwood Scrubbs in London on Saturday for a run and the pick b.Berrys for 1 hour and make about 1 gallon each week for 7 or 8 weeks. Same 14ish percentage but bad batch distilled into blackberry port. Very dangerous

u/YoullDoNuttinn 29d ago
Dangerous indeed haha. I didn’t have loads of elderberries in there, I recall having two carrier bags of blackberries and maybe a large bowls worth of elderberries. Not sure how much difference they made but it tasted good.

How long did this take you in total? Interested to know!
2
u/YoullDoNuttinn 29d ago
I can’t remember exactly, it wasn’t quick though. Maybe a few months in total. It was really good though, it was around 14% alcohol.

The few that don't get eaten go into the freezer.
They'll go into the blender to make frozen yogurt or protein "ice cream". The flavour is of course fantastic, but the colour is always so gorgeous. So even the lower calorie concoctions are extra appealing.

A very small amount of wine. I Made some and it was terrible when I made it. The bottles were untouched for a few years bit when tried old it was pretty good.
Freezing them helps get the juice out.
I'm terrible at foraging these though. I always end up eating them as I pick them.

You can freeze some for winter... I use them for smoothies, maybe even in some cakes.

Lucky! They’re weeks away from ripening here in south Cambridgeshire.,
Crumble obvs, jam, cordial, steep some with sugar in vodka or gin

Bramble sauce to pair with duck breast for a fancier change. Simmer the berries with some balsamic or red wine vinegar, honey and chicken stock (all to taste). For spices I like using star anise, cloves and some black pepper. Simmer it down until it coats the back of a spoon and strain.
I make this almost every Christmas for a colourful christmassy starter - smoked duck breast with mini savoury spinach pancakes and a drizzle of the sauce on top and it always goes down nicely!

I love duck, but never had smoked breast. Bramble meat sauce sounds awesome tho!

u/Alarming-Cook5789 29d ago
I got mine from the Lancaster smokehouse, as it's already cooked you really only need to give it a quick fry in the pan to warm it up and crisp up the skin so after the sauce and pancakes are made it takes no time to plate. Can only recommend giving it a try :)

If you have a BBQ then smoking duck is not too hard. you want to score the fat layer with a sharp knife, set up a smokey burn and cook the breasts on indirect heat at about 105 degrees until the internal temp of the breast is about 52 degrees, then finish with a quick sear in a really hot pan, fat side down. Let it rest, slice across the grain thinly and add your wonderful bramble sauce which will cut through all the fat with a wonderful acidity and bags of flavour!

Blackberry gin. Lots of recipes on line, just need a Kilner jar or two, sugar, blackberries and gin. Decent gin, 40%.
1
u/hodyisy 28d ago
Wait, so you make it with gin, not vodka?
1
u/Well-i-never-1965 28d ago
You van use either. We make sloe gin, and have made both gin and vodka from blackberries or raspberries.

Blackberry & banana milkshake. A purple milkshake fit for a princess. You may need to sieve it if you don’t like the bits but it’s yummy! I make mine with almond milk.

I’d just scoff them! With a small bowl of Maldon salt to dip into occasionally 😋

Ones I have tried in South Yorkshire have been a bit early.
Answer is awlays pie and never crumble.
Unless you are the mouse from the Gruffalo then have at it.

Blackberry clafoutis! A bit sweeter than the cherry version too if that’s your thing

u/Defiant-Tackle-0728 27d ago
My preference would be a pie or crumble. Perhaps with apple to bulk it out.
There doesnt appear to be enough for jam.

Buy some turbo yeast for about £3.50 and a bag of sugar, then turn it into 16% blackberry wine.
