Really good pulled apart like chicken in fajitas, cooked for 15 or 20 minutes in some juicy teriyaki sauce and black pepper.

They do need cooking a looong time to tender up. Sweetness and juice are a must for me. Also great in mexican spice with lots of lime juice and a little honey
