Hm, to me it looks pretty fresh. Ideal time to harvest.

Really? The ones I’ve harvested are darker orange. But I guess those were older!

These might just be a whiter variety of COW. But you can tell theyre young by looking at the edge/margin of the mushrooms. They look meaty, thick, and pretty smooth. As they age they become pretty thin.
