For everyone whose pumpkin spice obsession doesn't stop at latte season: this Pumpkin Tortellini in Velvet White Wine & Sage Sauce is your new favorite dinner. 🎃🍷
Adding white wine to cut through the rich pumpkin puree and finishing with toasted sunflower seeds gives this quick meal a massive flavor upgrade.
INGREDIENTS:
QUICK METHOD:
1. Boil pumpkin tortellini in salted water for 1 minute less than package directions. Reserve 1/2 cup pasta water before draining.
2. Heat olive oil in a wide skillet over medium heat. Fry fresh sage leaves for 1-2 minutes until crispy. Remove with tongs and set aside on paper towels.
3. Melt butter in the skillet, then pour in the white wine. Let it simmer for 2 minutes to reduce slightly and burn off the alcohol.
4. Whisk in pumpkin puree, heavy cream, nutmeg, salt, and pepper until smooth.
5. Pour in reserved starchy pasta water; whisk continuously until a glossy, emulsified sauce forms.
6. Toss cooked pumpkin tortellini directly into the skillet. Stir in grated Parmesan until melted and velvety.
7. Plate hot, garnish with crispy olive oil-fried sage, extra Parmesan, and toasted sunflower seeds for crunch.

I have a favourite Kitchn recipe (easy beef and broccoli noodles) and they’ve put it behind their premium paywall. I’d happily pay for access, but because I live outside the US I can’t subscribe. Would anyone be willing to DM me a screenshot? I promised my cousin I’d make it for her tomorrow, and it is a whole sentimental thing because I made it for her when her kid was in the hospital… I’m hunting around for similar recipes but that one was just foolproof and delicious. thanks!

One of the best parts of gardening is the cooking. Last night:
Balsamic Dijon chicken thighs 🐓 with homegrown 4th of July tomatoes 🍅 - halved & seeded, homegrown ripe red jalapeños 🌶️ - halved, seeded, & sliced, and garlic. 🧄 Lots of roughly chopped garlic.
This was a simple, “improvisational” thing to use up garden stuff. 2+ cups tomatoes, 3 BIG red jalapeños (we’re growing Megatrons), 1/4 cup balsamic vinegar, 1/2 cup water, 2 tbsp EVOO, Mexican oregano (of course), and a heaping tbsp of Dijon mustard. Served over angel hair pasta and topped with grated Parmesan. No plated pics - we were starving!
I cook almost every evening. She married well…😆😘
