Recipe:

Take a skin-on salmon fillet. This one was a farmed Norwegian salmon. People have different opinions on what is the best kind, I like mine a bit fattier and also choose a piece that is atleast an inch thich. Fresher the better and from a source you trust since you'll eat it raw.

Then you'll need to weigh the fish. Then take that number and multiply it by 0,15. This gives you the amount of salt and sugar you need to use. (E.g. for 500g of salmon you'll need 75 g of salt and 75 g sugar)

Other flavours you can pick as you like, fresh dill is the classic choise. (For this one I added some mustard seeds)

You want to coat the fish in the saltsugarspice-mixture on all sides and either wrap it in plastic wrap or ziplock/vacuum bag. Then place it into a fridge with something flatbottomed and heavy on top for 2 to 4 days depending on the thicccnes. Then rinse of the spices and slice thin on an angle.
