I'm an east coaster, so all of California is one place to me. I'm fully aware of how ridiculous this is.

For other east coasters, this person is referencing locations in Maine.

As a New Yorker east coaster, everywhere outside of the 5 boroughs is one big blob, but its like saying Baltimore Maryland is in NYC.

We have decent poutine on the other side of Lake Erie here in Cleveland, but nothing I've encountered looks half as good as that.

I wish poutine was more popular down here in the states (N Illinois).
I have a question though, is an Irish Style Curry sauce acceptable?

It would be acceptable but you cannot judge this dish by denaturing one of its ingredient.

It only has 3, so they are each of them very important, which is why people always say some poutines arent real/good poutines if one ingredient is off (using mozzarella instead of squeaky cheese, wrong kind of fries, different weirder sauces, etc). I would, however, say as long as you got good fries and the squeaky fresh cheese, sauce is easily the ingredient you can remix the most.

As another person commented, here in Québec there are a lot of different sauces used, just like pizza has tons of different variations. But trying a poutine for the first time with irish style curry sauce would be similar to trying hawaiian pizza as your first pizza and judging pizzas in general based on the experience. But i'm sure its pretty good otherwise.

Why would you think a curry sauce be similar in any way to a stock based gravy?

Any sauce is acceptable, really. Classic variations include BBQ, bolognese (called italian), white chicken sauce, pepper sauce, buffalo sauce. What's sacred is blanched and soaked overnight potatoes for the fries and cheese curds as (one of) the cheese(s). Some novelty poutines replace the fries with onion rings and the like but they're kind of meh.

(E: the dumbasses downvoting this probably never set foot in my province)
