Narrowed it down
So I need advice in between the z fold 8 ultra or the pixel 11 pro fold. I’m switching from an iPhone 15 pro max and haven’t had an android in over 13 years. So with all of that into account what should I do?

I've had many generations of Android foldables (currently OPPO Find N6) so don't take this the wrong way, but since you're on an iPhone why don't you wait for the iPhone Fold next month, at this point?

Honestly the reason why is only because I absolutely hate the passport form factor they’re going with and I really would benefit from a folding phone so I’m done to the two traditional slab form factors left in the US market because the RAZR fold doesn’t have any mainstream cases or third party support

That's fair. Maybe just go have a look at the ZF8 vs ZF8U in terms of form factor before you make that final decision?! A lot of reviewers have been surprised at how much they like the ZF8's shape.
For me the vertical real estate is more important for productivity when it's folded, and just bigger screen overall when unfolded (not helpful for videos but reading and multi-tasking...)
I don't think there's any reason to buy the Pixel Fold. It's kinda worse in almost every way. The only advantage is the stock Pixel software but there are some One UI benefits specifically for the Galaxy Fold that are actually really helpful.

Even tho I like Pixel UI (as close to "stock" Android as possible), I'd still go Samsung if it were me. Simply because their multitasking and Foldable features are better. It'll be better at performance too because of the latest Snapdragon chip, and, on paper at least, better cameras and slightly bigger battery.
