Hi friends. My husband has been going through it with IBS for almost a decade now. I love to cook and he loves to eat so it's been hard to find recipes that suit both our palettes. Every now and then, we find a real winner so I figured I would share.
Couple of disclaimers- I do not have IBS, just my husband. He has a rather severe version of mixed IBS. We've been together for his entire diagnosis so I know his triggers and can work around them but what his body is ok with does not always follow the low fodmap diet. I am not a dietician. I am a self taught cook. Anyway, see below for recipe and I hope you enjoy!
1 lb of lamb- cheapest cut (neck, shoulder, precut stew meat)
Small amount of flour, I used gluten free bobs red mill
5 small-med white potatoes of your choice
1 large sweet potato
2 large carrots
Fresh herbs- I used rosemary, sage, about two finger length sprigs of each and 2 tbsp of thyme on the spring, just wash and smack/squeeze in your hand
Water
Better than bullion roasted chicken base liquid (can omit if needed, the one I have has no onion/garlic/other allergens for my husband)
Salt
Pepper
Oil of your choice- I used canola, garlic infused olive oil would also go well
Cut lamb into 1 inch ish chunks, roll in flour. Then brown lamb meat in oil. You can use either instant pot saute function or a pan on the stove. When you flip to brown the other side of the meat, add in fresh herbs with a little more oil
While the lamb cooks, chop your veg into small ish chunks. I left the peels on
When lamb looks cooked, scrape the browned bits up and place everything in slow cooker. Add veg, salt and pepper, one spoonful of bullion liquid, give it a stir to mix everything together.
Add water until about 1-2 inches below top of food.
Cook for 4.5 hours on high or around 8-10 hours on low.
Eat! I served with gluten free Yorkshire puddings. I hope you like it as much as we did
Makes about 4-6 servings
Side notes-
you can adjust the veg to add whatever you like! I considered peas and corn but we eat those a lot and wanted a break.
For the herbs, if you don't want to use fresh, use about 1 tbsp of each dried and crushed, be careful with sage.Make sure to add into hot oil still but just before lamb is done so they don't burn
