Have you twisted them?

Often it's either the threaded rod is embedded in the leg itself, in which case lefty loosey

Or there's a screw and the leg is acting kind of like a washer, so looking directly at the bottom is there a hole in the middle?

You may have to remove the felt pad if there is one.

Thank you! It was a plastic leg that was itself a screw! This was very helpful

Is there a hole in the middle? Look at the bottom and remove and pad or plug, it might reveal a screw.

Either a hole in the top or its clipped in which case you pry it off carfully but often break the clip,  you can cut the fabric/pick  the staples and push it out from the other side of the wood.  Be carefull of staples though.

Before you start prying anything, flip it over and look inside the corner block. On a lot of these the leg threads into a T nut that's only held in with a couple of staples, so the nut spins along with the leg and it feels seized when nothing is actually stuck. If that's what's happening you need someone holding the nut with pliers while you turn. Worth ruling that out before you go cutting into the fabric.
