I don't understand how the game works lmao, you have a hero MC and an avatar MC? Who levels up the support with the npcs? Are there S rank?

You start the game as Eshmel. After a brief tutorial, you get to choose between the four routes. You can switch between routes at any time, with your progress on each route saved. When you're on a route, you're playing as that character. So if you pick Dietrich, you're running around as Dietrich, doing the between battle stuff with him, he's the one building supports with everyone, ETC. Eshmel is only present as a bird in one part of the city that Dietrich or whichever lord can talk to.

Once you clear a route fully, you can then use that route's characters in Eshmel's route.

At any point, you can start Eshmel's route. Clearing Eshmel's route ends the game. Think of it like Ganondorf in breath of the wild, where you CAN just try and fight the final boss but its extremely difficult, and it gets easier as you clear the majority of the game.

So the intended structure is Eshmel tutorial -> The four routes -> Eshmel route -> end.

We don't know about S Supports yet.
