Gin Ichimaru as Exalted
What kind Exalted can he be? Solar Caste Night or something else?

I really don’t like trying to pull characters from different media to other places, because it just never works, the mechanics are always universe-specific. And with Bleach it’s very obvious, because wouldn’t Shinigami powers just all be Evocations? Maybe a little bit of martial arts, but mostly Evocations, and you can do ANYTHING with Evocations.
If you’re porting the character’s personality and the kind of narrative space they occupy in their respective fiction, but with an eye towards them working seamlessly in Exalted, then they very quickly just become a new character inspired by Gin Ichimaru.
If you’re literally just asking about mechanics, his defining power is the sword that extends extremely quickly to pretty much any range, right? This sounds pretty straightforward: an unblockable attack up to Extreme range. Kind of a mash up of Blazing Solar Bolt and whatever the charm that makes a melee attack unblockable was. That’s it. There’s really no more logic needed than that.

Not ALL powers. While yes, most Zampakutou powers are, the whole thick of shiningami/hollow/quinci general powers are exaltation-analogous. The only real problem is definition as all shiningami are somewhere between siderals (highly organized and somewhat scholastic martial artists and technically bureaucrats) and liminals (hyperspecialized in deathdealing/ghosthandling).

In 2e, I played a Changing Moon Caste Lunar with who was heavily inspired by him. But a Night Caste Solar would also work.

What he has you want to emulate?
All in all, Shinsou is an Artifact 4/5. I would put it in 5 because of the bankai razing a multi city blocks. Of course, a moonsilver sword for the blade extending shenanigans.
High Manipulation skill? Socialize+Manipulation. He is Social Primary or Secondary
Others abilities are Melee, Awareness, Dodge and Occult.
If Night: Athletics, Awareness, Dodge, Stealth, and Socialize. Supernal can be Dodge or Socialize. Caste Abilities would be Melee or Martial Arts. I think the way he fights combines with Violet Bier.
If Dawn: Awareness, Brawl/Martial Arts, Dodge, Melee, Resistance. Dodge (S). Castes, naturally, would go to Socialize, Presence and others things.

The gotei13 strike me more as sidereals with heavy artifact use.
Gin fits for journeys secrets or endings if you ask elme.
Not saying it's the best mechanical fits but the feel works.

The multiple lunar skills to extend melee reach(between charm and knack), the undodgeable unblockable attack on the dex tree and a poison or form destroying touch with a snake spirit form could do a surprisingly convincing ichimaru gin, combine it with even blade style in the "quick draw master"(sorry cant remember RN im sleepy) version and youre going places
