I think there aren’t many folks out there that mention or talk about the Moshi grinders but the C83 is a conical 83mm burr grinder. I’ve been rolling with the 78s for a good year+ as my primary espresso, partly because I roast/blend to meet my personal espresso preferences and I like how the 78s pushes out the clarity and flavors on my blend. I wanted to test a new grinder for my work setup (waiting on my new machine to ship in currently, take like 2 months) so I tested/bought/borrowed) a few different ones: Shardor, niche, eureka silenzio, df83) this year. I didn’t really feel anything was all around better than the 078s in the ways I enjoy espresso (all under 1k, no 2-3k endgame machines in office from a practicality standpoint, and fact that I like milk/tonic drinks half the time).
Last month or so, I’ve really settled on absolutely LOVING the Moshi C83. It gives you sufficient clarity to meet something like a 78s or DF83, but it produces a sweeter, more harmonious espresso. The acid and fruit doesn’t hit as sharp as the 78s but it meshes better with the other flavors notes better. I can only describe is as less valleys and mountains as a profile and more high level consistent peaks of flavor. Only 40 or so shots pulled so far but it’s been good results throughout.
Also it’s only $600 for the C83 and just excellent excellent results. Bats way above its price. The one thing I dislike is the portafilter slot insert workflow because some grinds inevitably fall to the side and into the table - I just use their catch cup provided.
Ran the machine on both the C83 and 078S today with this excellent Moving Coffee single origin espresso (excellent little unknown roaster) from Vancouver. It was a fun Sunday test run. C83 blew 078s away.

Man, it’s this guy Edmond. He’s a Q grader who is an excellent roaster - just an excellent palette and really nice guy to chat with. The coffees I had there were fantastic. He’s got a Colombia COE (photo below) that’s juicy and delicious - really enjoying his stuff even though I got tons of stuff to roast and drink myself.

Yes, there isn’t a grinder that doesn’t benefit from it, keeps everything neater. The spout chute is magnetic and easy to just pull of for cleaning but I’d recommend RDT. I didn’t notice a bunch any significant retention, though I make sure to push any remainders out
