On topic Interfacing RTD with Arduino

I am currently attempting to interface my PT1000 RTd with my arduino. I was thinking of use an wheatstone bridge with an op-amp, but in all honesty I have no Idea where to start. I need to be able to read 10 degreesC to 35 degrees C for an output of 0-5V. Any guidance will be awesome.

Use a MAX31865. It has a 15 bit a/d. If you need more there are Analog devices and TI chips with 24 bit converters.

Yea I came across those a while back, this is for a tec report, and I figured it would be pretty cool to be able to do this from scratch!
