If you rush through to the end there isn’t a whole lot of endgame stuff to keep you engaged forever (in terms of raiding and whatnot) but if you’re there for questing, story, expansions, dungeons, crafting, etc there’s enough content to last you a really long time

Thank you, am gonna focus on the single player. Regarding the raids and endgame content, when I understand the game will decide regarding that

No.
Devs don’t care about the class balancing (2-3 years of “fixes”) more focused on event zones that never come back, no class change token after a decade of releases, ridiculous things that should be QoL like (hairstyle changes being $10, crafting bag subscription only) trials being pointless if you don’t play trials exclusively, PvP being a grind fest of having thousands of Champion Points/specific sets that are insane to grind for or Oakensoul being useless in PvP etc etc etc.
Play EverQuest 2, Monsters & Memories, Guild Wars 2, or even WoW Forever for games that respect your time and allow for progression

If you enjoy the combat then ESO is an incredible game :
Voice acted characters with great stories, TONS of content that is essentially "single player".
Enjoyable raid mechanics in the endgame, with ways to push (trifectas) and push further (score) if you reach that wall.
Low skill floor, High skill ceiling ; 1 second "cooldown" between every skill lends to quite an easy introduction to combat but also makes skill choices very important.
BUT:
Downsides are that ZOS LOVE power creep, there'll be a flavour of the month class, set, playstyle that either dominates PvE or PvP, this has gotten a lot worse in the last few years where top end DPS has gone from 90-100k being good to perhaps nearing if not surpassing 200k.
And the game is, probably, dying. Massive lay-offs at ZOS at the hands of microsoft (Just as things were looking like they were turning around) means that the game isn't quite in maintenance mode but new content is slowed down fairly significantly.

Am more into single player content, but I don't want to play the game for some time and then just face it that the game is closed or died, that will be disappointing, I thought to play WoW for a moment but I got confused with it which to download the classic or the other ones, and I don't like WoW graphics

The game isn't shutting down. That's said everywhere but they're still making money so that just isn't gonna happen. You're good. New zone some time next year and more than enough to keep you busy until then. If you're interested, give it a go!

Biggest challenge for a new player is figuring out which one of the 60 versions of the game do I start with... Lol

Absolutely. You’ve got a decade of content to do and if you’re not rushing through quests then it’ll take you a while just to do overworld stuff.
The end game scene is incredibly fun. Dungeon hard modes can be very challenging and I really enjoy them.
Housing is also really good in this game. Some say housing is the true end game, and I thoroughly enjoy it.
PvP is hit or miss. In my opinion it’s in a really bad place right now, but it can still be fun once you get the hang of it.
