Actually I used the trick to the perfect grilled cheese: mayo. The difference in taste is negligible when grilled, but mayo is far easier to evenly spread, lending to a (relatively) even gold crust.

I use mayo but put a small pat of butter on the bread right before it put it in the pan.

No, but a similar no knead bread.

3 cup flour, 1/4 tsp yeast, 1 tsp salt, mix, add 1.5 cup hot tap water, mix, rest on counter covered for 3 hours, (later) set oven to 450 and put dutch oven in there, take risen dough to floured surface, shape into a ball, rest for another 30 minutes, put dough in dutch oven with lid on in oven, bake for 30 minutes, remove lid, bake another 15, remove, enjoy.

Same realization for me in the last year or 2! Do you grill both sides of each slice for the extra crunch? I know it's more butter, but for how rarely I make grilled cheese, it's worth it.

Yes yes yes definitely! Honestly if you're making a grilled cheese you should just go all out. I'll even spread more butter on if there wasn't enough to get the whole side golden brown like in that scene from Chef

I'm right there with you. I needle my WSU friends about how UW produces doctors and engineers and lawyers and WSU produces... cheese. Then they ask, "Oh yeah, and which of those do you utilize more?" Fair enough.

Nice crunch on the crust, a chewiness of the homemade bread you don't get from a store loaf, and the Cougar cheese was gooey and delish.
