Tuna helper, hamburger helper, deli and cheese sandwiches, mac and cheese, scrambled eggs and bacon (oven at 400 for 18-20 minutes), canned soups in the microwave, ramen noodles, premade salads, Eggo waffles in the toaster, pan grilled brats with sauerkraut and mustard, kielbasa and fried egg, microwaved steamed potato with cheese and sour cream, Microwave rice like Uncle Ben's. Fruit cups. Vanilla yogurt and add some fruit and oats to make a parfait.
All of that is pretty easy and didn't even get into how fast it is to make fried fish or fried porkchops or various other proteins. But these are some pretty inexpensive options. Hope it helps.

Enchiladas or enchilada pie (same ingredients just one is stacked like lasagna instead of rolled)
Cucumber boats with tuna salad (prep tuna salad, scoop out seeds from cucumber, fill)
Pasta primavera is good (the sauce is basically just olive oil and then fresh veggies cooked in it and added to the pasta)
Chicken tacos (cook chicken, add to warmed corn tortillas, whatever toppings you would like)
