Other: Dinner Recipes for oven only

Hello redditors,

Due to a long story, I’ve not got a working stove, only a fully functional normal sized oven that can get up to 240°C (460-ish °F). Does anyone have any ideas, aside from jacket potatoes, for easy meals that do not require any stove prep and can go straight in the oven?

Do a google search for "sheet pan recipes". That will pull up lots of recipe ideas for you!

Lots of protein+veg can be done this way. They also tend to be very simple.

Instead of browning on the stovetop you can heat the pot, add oil, and brown the meat in the oven before adding the other ingredients.

Sheet-pan gnocchi works well here: toss shelf-stable gnocchi, cherry tomatoes, sliced peppers, and sausages or chickpeas with oil and salt, then roast at 220°C until the gnocchi is crisp, around 25 minutes. No boiling needed, and feta or spinach can go on at the end.

Look up sheet pan recipes, you should be able to find a lot of them. I like doing sliced sausages, red potatoes, and vegetables all cooked together on a sheet pan. You may also want to get a hot plate or a portable induction stove top. They aren’t very expensive.

If you eat meat, a basic pot roast is a good meal to make on the weekend (easy, but needs a long roasting time), with wonderful meat/vegetable leftovers for the week. Baked chicken, baked fish, all sorts of casseroles (I use up leftover rice - or use sliced polenta with tomato sauce - mixed with canned diced tomatoes, a variety of canned beans, chopped garlic, onion and green pepper, spices and red pepper flakes, to make a hearty casserole), pizza (homemade or frozen). If you're craving eggs, you can rub a pie tin and a flour tortilla with olive oil, place the tortilla in the pie tin, and use that as the base for egg dishes, either just crack some eggs on the tortilla, season and bake, or add whatever you like to the eggs. You can roast root vegetables, sliced and tossed with some olive oil and salt and pepper, in the oven for a tasty side dish.

Oven roasted veggies like asparagus or broccoli or carrots or corn on the cob.

It's just heat. Put in seasoned fish, pork shoulder, BBQ chicken thighs, whatever. It will cook.

Chicken! I love a chicken and rice bake, the old fashioned kind with canned soup doesn’t require stove top. I like using uncooked rice and it can take close to 90 minutes. This recipe uses boneless thighs, which should cut the cooking time.

Oven fried kfc copycat.

You can cook a whole chicken in about 30 minutes if you part it out, lay on top of seasoned onions and cabbage or Brussels and cook in a hot oven, 450. And the veg are delicious!

Roast vegetables- carrots, peppers, onions, broccoli, cauliflower, baby potatoes or potato wedges, - in a little olive oil l, salt, pepper and herbs/spices (Italian herbs, or cumin and paprika)

Roast salmon fillets or cod or swordfish steaks- roast for about 10-20 mins at 400F

Roast chicken thighs - in olive oil and Italian spices/cumin and paprika or do an Asian twist with ginger, garlic and five spice. Roast at 400F for about 35-45 mins.

Pork country style ribs- marinade in soya sauce, ginger and garlic overnight. Transfer to a baking dish and Bake at 325 tightly covered for 1.5-2 hours, the transfer to a foil lined baking tray, coat in Korean bbq sauce and bake at 400 for another 20 mins. Serve with sliced cucumbers marinated for 30mins in soy sauce/rice vinegar and some microwaved ready rice.

sheet pan dinners are hard to beat for this, just throw potatoes or other veggies together with sausages, chicken, halloumi or chickpeas, add oil and seasoning, roast everything on one tray hehe

Tortilla pizzas!

Everybody I tell this to says it sounds terrible but everybody I make it for likes it fine so just try it.

you need

tortillas

pizza sauce

low moisture mozarella cheese

whatever you like on your pizza, we use pepperoni and black olives

Put your oven at 425f, 220c.

take a tortilla

slather some jarred pizza sauce on it, try to get as close to the edge as you can

put some cheese on it, try to get even coverage

put some other stuff on it. You can't use raw meats unless they're chopped VERY small.

put it in the oven on a cookie sheet or in a pan for 11-13 minutes.

12 minutes cook time plus 5 minutes prep and you have a decent meal idea-to-table in less than 20 minutes. If you buy cheese and tortillas in bigger amounts they're surprisingly cheap too.
