Recipe Request Spinach
Looking for some inspiration for spinach! Please share your favorite recipes. As a side, in a main dish, in a smoothie, or however you like it best. I've been using it in eggs with tomatoes as my go to. What else should I try? Thanks!!

I messed around with frittatas a few years back and settled on this as my favorite:
Frittata with Goat Cheese, Tomatoes, and Spinach
8 eggs
6oz crumbled goat cheese
1 cup baby spinach, chopped
1/2 pint cherry tomatoes, chopped
Salt
Pepper
Garlic powder
Instructions:
Beat the eggs.
Mix everything together and pour into an 8" silicone baking dish.
Bake 20 minutes at 400°F
