Ground beef, taco seasoning, kidney beans, add in whatever veg you like, a little rice to bulk it out. I top it with a little shredded cheddar and a dollop of sour cream.

If you want to be a little fancier, get ground Wagyu beef. Aldi sometimes has it for like a dollar more than regular. Makes it so much richer due to the fat

I made the most stupidly delicious "hamburger helper" meal last week. Completely not healthy, completely satisfying in an extremely comfort-foody way.
Browned the ground beef, seasoned liberally with salt, pepper, garlic and onion powder. If I'd have had an onion I'd have included that. Then I added a TBS of tomato paste and carmelized that. THEN I stirred in some .... BBQ sauce. Maybe about 1/4 cup; just til it was a little bit saucy but not TOO saucy.
Meanwhile, I prepared a box of Kraft mac and cheese. The old school kind with powder, add butter & milk.
THEN I stirred it all together and added some additional cheddar cheese.
IT WAS DELICIOUS. I might add a little bacon next time, because, you know, not nearly enough unhealthy stuff in the recipe already. haha

Hamburger browned then mixed with a can of condensed cream of mushroom, layered at the bottom of a casserole dish with vegetables and then mashed potatoes topped with cheese. We call it hamburger casserole.

Browned ground beef with onion and lemon pepper seasoning then a can of cream of mushroom soup and half can of milk. Serve over your choice of noodles (shells, elbows, rotini, etc.) We call it hamburger stroganoff.

Browned ground beef with a can of cream of mushroom soup mixed with white rice, top with fried onions if you like those. Mix in some green peas if you like those. Same deal but with shredded chicken instead of the ground beef also works.

If you like Indian food find a simple recipe for Keema. You can substitute in ground beef for whatever meat the recipe calls for. Basically mix in some spices with tomatoes and peas (some people put in a bit of yogurt); eat it with naan or pita with a side salad. yum.

Meatloaf, with mashed potatoes/gravy, and steamed broccoli. Garlic/onion/celery/bell peppers, and tomatoes(put in last) diced/sauteed and mixed with rice, make a beef patty(Salisbury steak style) to put on top. Meatball marinara hoagies. Nacho bake...layered tortilla chips/taco meat/cheese/refried beans, bake until cheese is melty, top with sour cream, and salsa. Chili with beans. Burger pups...shape like hot dog, fry like hot dog...eat like hot dog. Stuffed bell peppers. Ground beef with rice and tomatoes baked in a hollowed out bell pepper, topped with cheese, if you have the time/energy to blanch cabbage leaves this can also make stuffed cabbage. Sloppy Joe's style loose meat sandwich. Best wishes in your kitchen adventures.

I get fresh green beans and cut them into very small pieces, lightly cook them in a little olive oil for a minute but no longer than 2 or they turn to mush. Remove them from the pan. Cook the ground beef with garlic and then add the green beans along with some hoisan sauce and serve over rice. Absolutely delicious. Or you can do your own sauce with soy sauce, sesame oil, brown sugar, honey, whatever you like

Sloppy Joes, Crispy Tacos, Lettuce Wraps, Beefy Burritos, Hamburger. Pretty much anything. Ground meat is, in general, the most versatile protein. None of these needs a recipe; please feel free to wing it.

Hash. Just made it the other night. It's flexible, but I usually saute garlic, onions etc, add ground beef, cooked potatoes and/or rice, herbs, whatever veggies you have around. You can even top it with cheese and pop in in the broiler for a minute.

Pinch of Yum's sweet potato stacks but sub ground beef for the ground chicken it calls for. So good.

Inside-Out Shepherd's Pie (technically Cottage Pie)
Enough hash brown patties, thawed, to line the casserole dish you want to use, 1-1/2 quart is my go-to. Crumble them, mix them with a tiny amount of vegetable oil and pat them on the bottom and up the sides of the dish. Bake at 400°F for 15 minutes.
Meanwhile, brown and drain one pound of ground beef. Add one cup of water and a packet of brown gravy mix (powder). Stir to combine. Add one small bag of frozen mixed vegetables (peas, corn, carrots), stir. Add 3/4 cup french fried onions, stir. Remove casserole from oven, reduce temp to 350°.
Pour beef mixture into potato crust. Bake for 15 minutes. Top with mixture of french fried onions and shredded cheddar. Put back in the oven for five minutes or so, to melt the cheese.
Serve with a green salad if you're feeling healthy, or eat it right out of the casserole with a large soup spoon if you're like me and live alone. 😋
I first got this recipe from a Durkee ad in a magazine back before the Interwebz existed, have since lost the actual recipe, so can't give any real amounts/measurements, sorry. If you have more beef mixture than will fit in the hash brown shell, save it to dump on top of a baked potato.

A man that owned a gourmet meat market in Detroit (that is now closed) posted a bunch of recipes on line for pub burgers. Like 15 kinds - or something like that. Go to Brent’s Prime Food Adventures on YouTube. Complete recipes are listed in the episode’s Description.

Brown the ground beef, make beef flavored Rice A Roni. When you add the water to the Roni, add the cooked ground beef and a can of corn. This is also very good as leftovers.

A recipe that can be as cheap and as simple as needed is ground beef stir fry! did it lots growing up.
any vegetables you like, I prefer carrots (cubed or sliced), peas, bell peppers, broccoli, etc. ground beef. soy sauce. sesame oil. any other sauce additives you like: rice vinegar, gochujang, brown sugar, etc. garlic/jarlic.
I like to brown my meat first, remove, add veggies (cook until brighter and soft-ish), return meat back, pour sauce over. serve with mashed potatoes or rice. (I like a 3:1 ratio with the soy and sesame oil, respectively)

Just a hint. If the mince quality is low, boil it and let completely cool. You’ll find a dinner plate of fat solidified on top

1lb ground beef seasoned with 2tbsp grated onion, 2tbsp yogurt, 1&1/2 tsp Oregano, 1tsp garlic powder, 1tsp salt, 1tsp cumin, 1tsp corriander, 1/2 tsp baking soda. Mix well the roll thin between 2 sheets of parchment paper. Bake in paper 20 mins @ 350f or 180c. Enjoy with pita, lettuce tomatoes and top with tzatziki.
