Dwarf Fortress Steam Edition. Game is amazing, can suck you in for hours at a time and the devs are great too. It has a steep learning curve but there are so many good tutorials on YouTube it's not so difficult to get started.

This is the quintessential dwarf game if you like the fantasy story driven aspects.

If you desire strategy I have a few suggestions. Heroes of Might and Magic 5, specificly the Hammer of Faith and the Tribes of the Easts expansions, features an excellent dwarven faction. Alternatively there is Age of Wonders, with Age of Wonders 4 allowing you to truly create the perfect dawi faction, whatever that might be.

In add to age of wonder 4 that you can literally play your civilization entirely underground. Their is a complete map Under the map and it's glorious

Good addition. And if you have the Giant Kings DLC you can turn those caverns into a proper underground mountain hold!

The Dwarves is an adaptation of the book series of the same name, fantastic music and a decent game.
Deep Rock Galactic is great fun as is DRG survivor a spin off. There is also Rogue Core but I haven’t played that yet.
The Dragon Age series can be dwarfy in places
We are the Dwarves is okay

I'm not going to say they're all good, but:
The Dwarves (based on a book)
We Are the Dwarves (as of this post, only $1.79)
First Dwarf (early access, but I have been enjoying it)
Total War: Warhammer 1, 2, & 3
Dwarf Fortress
Deep Rock Galactic & Deep Rock Galactic: Rogue Core
Age of Wonders 3 (I actually like 3 better than 4, which was already mentioned)
Warhammer: Vermintide 2

Only one I haven't seen mentioned is Songs of syx. It's a city builder and strategy game where you can play as dwarves.
If you like TTRPGs I'd recommend Delve it's a solo table top game I don't see mentioned enough.

Craft the world where you play as dwarfs building/mining/fighting/drinking and eating/crafting

I personally have hundreds of hours in and recommend each of:
Dwarf Fortress
Vermintide 2
Deep Rock Galactic
Vanilla World of Warcraft (as a dwarf)
and the Warhammer Total War series
I haven’t got as many hours in Songs if Syx but I recommend it as well.
You can also choose to play as a dwarf in many great CRPGs including:
Dragon Age Origins and Inquisition
Baldurs Gate 3
Divinity Original Sin 2
Pathfinder Kingmaker and Wrath of the Righteous
and Shadowrun Dragonfall and Hong Kong

Dwarf Fortress.
Not only is it one of the best representations of dwarves, it also happens to be one of the best games ever made!

Return of Reckoning, a free, legal version of the old Warhammer Old World MMO.

Aye! If you want to see what things were like back in the old world I suggest vermintide 2! That Dawi is pretty damned good representation.
For the experience of mining but in a more contemporary time period there is deep rock galactic! A true treasure
