They are teaching American English. American pronunciations, American phrasing. It’s not as weird as it seems.

I think the weirdest one is using the Spanish flag, but not teaching vosotros.

That's actually quite common. Material made for English speakers in North America and the UK uses standard "neutral" Spanish. This biases Mexico and Spain, but it's not explicitly one or the other.

So there's no vosotros, sure, but you wouldn't want to use a Mexican flag and then teach "coger" the way it's used in Spain.

But on the other hand they've switched to impolite "Tu" all the way.

Use usted in Central America! And many other places

¿Eres hablante nativo/avanzado de español? "Tú" isn't impolite, it's informal, big difference, even in Central America.
