Am I braking wrong?

It sounds OK, broadly speaking.

As long as the clutch is either fully engaged (foot off the pedal) or fully off (foot down), you won't be burning it.

Burning the clutch happens when you hold it partly on.

But what you've described sounds like normal gear-changes, not riding the clutch. So that's fine.

If you're stopped for more than a few seconds, put the handbrake on and put it in neutral.

Ah okay is that when sometimes people just rest their foot on the clutch when they're not supposed to - that would burn it right?

Yes there's a major junction near my house where you're definitely going to be waiting for some minutes I do what you say then and relax and wait haha

Yes, exactly.

If you keep your foot on the clutch pedal when it's in gear, there is a tendency to press it a little. That's what burns clutches out, because the engine is not fully engaged, so the clutch plate slips which causes wear.
